Another quick, hot sandwich that’s good on a winter night. Rick shared this recipe on a homeschool forum I’m part of. His wife, Linda makes them and Rick said they are good enough to be world famous. I think he’s right. The recipe makes a lot. It would be great for a crowd, but if you’re just feeding your family you might want to cut the recipe in half. Honey Cashew Pork Stir-Fry
I printed this recipe from Meals for You a long time ago. I altered it a little bit. Stir-fry is always a hit with my kids, even if it has celery in it (not a favorite of any of them). The ingredient list is simple and I almost always have all the ingredients, with the exception of cashews. They are worth adding to the recipe though. Yum! Chicken-Fried Chops in the Slow Cooker
These pork chops are so flavorful and tender. The gravy is great on mashed potatoes (I’ll share that recipe tomorrow). This is a crockpot recipe, but there’s a bit more work involved in prepping the meat for slow cooking. Normally, I don’t like recipes that call for browning the meat before cooking, but in this case the result is worth it. You want to get that golden crispness on the chops. Baked Potato Soup
My only complaint about this soup is that we only had enough left over for 3 people to have it for lunch the next day. It was so good, next time I’ll make a bigger batch.
I accidentally altered it a tiny bit from the recipe. I didn’t even realize that I’d made the mistake until I woke up at 1am and remembered that I hadn’t put the sour cream into the soup. Honestly, the soup was so good without it, I doubt I’ll ever add sour cream. (Am I the only one who wakes up in the middle of the night thinking about stupid things like sour cream in soup?)
