This cake is a perfect example of my foodie motto put into action. More chocolate = more better. My mom gave me the recipe for Texas Sheet Cake several years ago. I’ve made it a few times, but it wasn’t very chocolatey. After looking at other recipes for Texas Sheet Cake that I found in old church cookbooks, I decided to double the cocoa in mom’s recipe. Now we’re talking! The photo doesn’t show the color as well I wish, but the extra cocoa gave the cake a deeper color and flavor – more like brownies.

Snickerdoodle Muffins
All the scrumptiousness of a snickerdoodle cookie baked into a muffin. The idea for this muffin popped into my mind, so I went on a quick internet search for a recipe. When the search yielded nothing, I decided to make up a recipe myself. I wanted the tops to come out crinkled with cinnamon sugar like the namesake cookie. I also wanted to use cream of tartar in the batter, since that is a key ingredient in the cookies.

Pepper Jack Mac and Cheese with Broccoli
I’ve been experimenting with pepper jack cheese in various recipes lately. Macaroni and cheese seemed the perfect dish to highlight this ingredient. Because I was afraid that using all pepper jack would be too spicy for the kids, I went with half pepper jack and half monterey jack. It was good, but next time we’ll use all pepper jack. Even the kids thought it would be good with the extra kick. I originally intended to serve the broccoli along side the macaroni, but tossed it all together at the last minute. Coconut No Bake Cookies
A minor tweak to the original No Bake Cookie, makes for a delicious change of pace. The same chocolatey goodness with a twist of coconut. I thought about adding shredded coconut to them, but decided that my kids might find that a bit to much. If you’re a true coconut lover you could substitute the oats for coconut. Frozen Hot Chocolate
I decided to be fancy and drag out the wine glass to drink the frozen hot chocolate. It tastes good enough for a fancy glass.
