I’m not sure where I saw this idea of serving chili over the top of macaroni and cheese. But ever since I ran across it, I’ve wanted to give it a try.
And oh yes. It is just as good as I imagined it would be!
The chili with all of its meaty, spiciness contrasts wonderfully with the creamy, cheesy pasta.

I bought a pressure cooker several months ago. I’ve been slowly learning to really make use of it and recently I decided to make more of an effort to try some new things. As soon as I tweaked this recipe for Instant Pot Mac and Cheese, I knew I had to share it with you. One of the beautiful things about the Instant Pot recipes that you’ll find here on the blog, is that they work in any electric pressure cooker. So, whether you have an Instant Pot or Cuisinart or any other brand, this Instant Pot Mac and Cheese will be a big hit!
Of all the different mac and cheese, and especially the Instant Pot Mac and Cheese, recipes I’ve tried, this one is the winner. It’s creamy, cheesy and homemade. And it’s faster than the other methods. I think it’s even faster than my other mac and cheese. You know, the one with the processed cheese product, which I do love, but isn’t very healthy.
I love that this Instant Pot Mac and Cheese is homemade, but doesn’t require you to make the sauce separately from the macaroni. It’s fewer dishes to wash, fewer steps and easier prep.
Earlier this week I shared lots of recipes for making use of rotisserie chicken. Here’s another one for you. If you keep cooked chicken in your freezer, you’ll be able to make this recipe in about 20 minutes. All the ingredients are pantry items that we tend to keep on hand.
The recipe comes together quickly. You’ll make a quick white sauce and add cheese to it. I love an easy meal that also is homemade.
Cheddar cheese and tomatoes with green chilies help make this dish full of flavor. My kids loved this one and so did I.

This recipe came about when I looked up from my computer and realized it was already 5:30 and I hadn’t started dinner. (And no, the irony that I’m a food blogger and still have this problem is not lost on me.)

I’ve been experimenting with pepper jack cheese in various recipes lately. Macaroni and cheese seemed the perfect dish to highlight this ingredient. Because I was afraid that using all pepper jack would be too spicy for the kids, I went with half pepper jack and half monterey jack. It was good, but next time we’ll use all pepper jack. Even the kids thought it would be good with the extra kick. I originally intended to serve the broccoli along side the macaroni, but tossed it all together at the last minute.
