Croque Monsieur – “Fancy” Toasted Ham and Cheese
I found this recipe in a Rachel Ray cookbook. She talks about eating these sandwiches in Paris. That sounds nice. I just ate mine in the kitchen.
I adapted her recipe a little bit. She says to use Gruyere cheese, but I couldn’t find any so I used Swiss. My kids called these “inside out sandwiches”, because the cheese is on the outside of the bread. When you grill them, it toasts to a flavorful crust. Moosehunter Cookies – Canadian Chocolate Molasses Cookies
I went on a hunt for Canadian treats to eat while we watch the Olympics and found these yummy cookies. The recipe comes from Mennonite Girls Can Cook. I’d never visited that blog before, but they have lots of yummy recipes over there.

Apple Brownies
Despite the name, this dessert has no chocolate in it. It is the texture of brownies, with a dense center studded with apples and a crisp top. The cinnamon apple flavor is so good, especially warm. And the ingredients are items I almost always have on hand.
