Easy Homemade Mock Fried Ice Cream

When International Delight asked me to create a recipe using their creamer, I first thought of adding it to scones or muffins.

But I couldn’t get ice cream out of my mind. I love ice cream and I’ve used International Delight to make homemade ice cream several times.

This time, I wanted to make a flavor based on fried ice cream. I used Cinnabon flavored creamer, along with some crunchy, cinnamon cereal. Just 4 ingredients total keep the ice cream easy.

And it tastes just like fried ice cream! This did not last long at our house.

Ingredient Spotlight: Dry Cereals

Dry cereals can be used in lots of recipes – for adding crunch to a casserole, or breading for meats. To snack mixes for munching.

And does anyone have a recipe for muffins that uses dry cereal? I know I’ve seen great recipes before (one that makes 6 weeks worth of muffins??), but I don’t have any on my site.

Butterscotch Snack Mix

Need to satisfy an extra big snack craving? This is your recipe. It makes a bunch. And I warn you – if you start munching it, you won’t be able to stop. I adapted the recipe from an old Taste of Home magazine. The original called for Crispix Cereal, which I couldn’t find. Do they even make that anymore? I also changed a few other things.
