The Beef. It’s What’s for Dinner recipe challenge this week was for Beef Pot Roast with Maple Sweet Potatoes. I used the recipe as inspiration and then did my own thing. The roast turned out delicious. It smelled wonderful as it simmered in the slow cooker. The ingredients are a bit strange, and to be honest I wasn’t sure it would turn out at all. But I’m happy to say that we all loved it.
A bowl of homemade chicken and dumplings. A glass of sweet tea. It’s a meal any Kentuckian would be proud to fix and danged happy to sit down to. And it’s not hard to make. Come on, I’ll show you how.
You probably have all the ingredients for these dumplings in your kitchen right now. And you don’t have to be a great cook to make them.
There’s nothing like coming home to hot chicken soup. I made this soup up on the spot last week with ingredients I had on hand. Substitute as needed.
The ingredients I used:
chicken tenders or boneless chicken breasts (the amount just depends on how chickeny you like it and how many people are in your family)
1 can corn or cream style corn
2 boxes chicken stock
ground red pepper, just a shake to give a little flavor
salt and pepper
Combine all the ingredients in the crockpot and cook on high all day.
