Whole Wheat Apple Pancakes

I’m pretty sure my family eats more pancakes than the average household.  We rarely ever have them for breakfast.  My kids know if Jim is out of town, we’re probably having pancakes for dinner.  Or if I need a super-quick meal, pancakes it is.

I served this stack for lunch after church, with ham and a fruit salad.  I dressed up the whole wheat pancake recipe with apples, applesauce, cinnamon, nutmeg and brown sugar.  Delicious appley goodness on an October afternoon.

Fall is here and so are the apples!  Is there anything better than a crisp, sweet apple just picked from the orchard?  Jim’s favorite Sunday night supper is an apple (he likes his tart) with cheddar cheese and a bowl of popcorn.  Simple and delicious!

Harvest Apple Pot Roast – Beef. It’s What’s for Dinner.

The Beef. It’s What’s for Dinner recipe challenge this week was for Beef Pot Roast with Maple Sweet Potatoes.  I used the recipe as inspiration and then did my own thing.  The roast turned out delicious.  It smelled wonderful as it simmered in the slow cooker.  The ingredients are a bit strange, and to be honest I wasn’t sure it would turn out at all.  But I’m happy to say that we all loved it.

Old Fashioned Spice Cake with Caramel Glaze

I have a confession to make.  It does involve bananas, like my last confession, but only indirectly.  It will also lead to how this cake was born.  A week or so ago, I fed my family muffins and milk for dinner.  That’s it.  Everyone survived.  My 14 year old son did give me a questioning look when I told him that’s what we were having.  I offered that he could fix an egg for himself, but he downed 4 or 5 muffins in just a few minutes and seemed satisfied.
