Tortellini Meatball Soup
- 1 onion, chopped
- 2 cloves garlic, crushed
- 2 Tbs. olive oil
- 2 boxes or 4 cans chicken or beef broth
- 20-25 fully cooked, frozen meatballs, thawed
- 19 oz frozen tortellini
- 15 oz can diced tomatoes
- 15 oz can tomato sauce
- ½ tsp. basil
- ½ tsp. oregano
- salt and pepper to taste
- In a soup pot, cook onion and garlic in olive oil till onion is soft.
- Add broth and bring to boil.
- Add remaining ingredients and boil, till tortellini is cooked.
