Tortellini Meatball Soup
 
Ingredients
  • 1 onion, chopped
  • 2 cloves garlic, crushed
  • 2 Tbs. olive oil
  • 2 boxes or 4 cans chicken or beef broth
  • 20-25 fully cooked, frozen meatballs, thawed
  • 19 oz frozen tortellini
  • 15 oz can diced tomatoes
  • 15 oz can tomato sauce
  • ½ tsp. basil
  • ½ tsp. oregano
  • salt and pepper to taste
Instructions
  1. In a soup pot, cook onion and garlic in olive oil till onion is soft.
  2. Add broth and bring to boil.
  3. Add remaining ingredients and boil, till tortellini is cooked.
