I love it when something so simple tastes so delicious. Three ingredients plus a shake of black pepper and you’ve got a super side dish. Or, keep supper really simple by adding a tossed salad and calling it a meal – a good one, at that.

Turkey Italian Sausage and Tortellini Salad
It’s not often that you can satisfy the pasta lovers, meat eaters and veggie people all with one dish. That’s what happened when I served this meal though. The recipe is adapted from a cookbook that my sister-in-law gave me. She is married to a career army man. When they were stationed in Schweinfurt, Germany (2007) she helped put together a cookbook with recipes from the families of those serving with the Vanguards 18th Infantry Regiment. That book is full of wonderful recipes, including this one.

Baked Spaghetti
We had friends over a few weeks ago. It was very spontaneous and we went back and forth trying to decide whose house we would get together at. Turns out both my friend and I were thinking of making a spaghetti dish, because that’s what we had ingredients for. I’ll have to eat her version sometime. Here’s my Baked Spaghetti recipe (actually a recipe my mom has made for years).
Macaroni and Cheese & Macaroni and Tomatoes
Two recipes for the price of one today. Although, they are both so easy I’m not sure they qualify as recipies. Macaroni and Cheese gets made and served frequently at our house. I think it ranks between the Kraft boxed kind and the delicious homemade baked kind. It’s fast, creamy and easy.

Creamy Tortellini with Red Bell Peppers and Peas
I know I’ve declared my love for pasta many times, but let me say it once more – I really love pasta! I bought the totellini with the intention of re-creating a pasta dish at Fazoli’s. I’ve never eaten that dish, but the picture in the ad looked good and involved artichoke hearts and sun-dried tomatoes. Yum. For some reason, I could not find artichoke hearts in Walmart the other day and I forgot to buy sun-dried tomatoes. I did have red peppers and peas though, so I created this instead. A very good combination of flavors in a creamy, cheesy dish.
