Pinterest is an interesting place. Sometimes, it’s really hard to predict what’s going to catch on over there. We all think Pinterest people love pretty photos.

But what they really love is easy recipes!

This recipe for Easy Crockpot Chicken Fajitas has been pinned over 110,000 times. Kinda crazy!

I couldn’t have this Summer Slow Cooker series go by without sharing this recipe. It really is a good one, written by Rachael who is one of my writers.

Slow Cooker Pasta Sauce with Sausage and Eggplant

My husband likes his pasta sauce with meat. I prefer mine to be packed with veggies. This is our compromise.

After hours in the slow cooker, the eggplant becomes melt-in-your-mouth buttery. If you didn’t know it was in there, you might not notice it. It’s a great way to sneak in extra veggies! For the sausage, I prefer to use pre-cooked sausage because it’s easier to slice up, but any Italian sausage would work for this.

This makes a pretty big batch for the two of us, but it freezes nicely for future use.

Here’s what you’ll need:

Slow Cooker Pasta Sauce with Sausage and Eggplant

Servings:

Ingredients

1 28 oz. can crushed tomatoes
1 16 oz. jar pasta sauce
1 T. Italian seasoning
2 cloves garlic minced
1 lb. Italian sausage
1 large eggplant

Instructions

In the slow cooker, combine the crushed tomatoes, pasta sauce, Italian seasoning and minced garlic.
Coin slice the sausage. Peel and dice the eggplant. Add both to the slow cooker. Stir well to combine.
Cook on low for 6-8 hours.
Serve over pasta, topped with parmesan cheese.

I love the sound of the ingredients for this Asian Orange Chicken recipe from Family Balance Sheet.

Honey, orange juice, garlic and ginger meld together to create a fantastic sauce. I also like that this recipe uses chicken thighs and legs. They are economical. Plus, chicken with bones just tastes better than boneless.

Everything about this recipe says summertime. Just 3 ingredients. A slow cooker. And making use of a summer fruit.

BBQ Peach Pulled Pork is a recipe by Kate, who is one of the writers here at Eat at Home. Kate used peach salsa in this recipe. I sometimes pick up what I call “inspiration ingredients”. Things like peach salsa that might be a good spring board for a new recipe or that I can use in a different way.

I think Hawaiian Cole Slaw would be perfect with these sandwiches. And maybe a side of Sweet Potato Fries.

Recipes that use the slow cooker in a non-traditional way are so fun. And this copy-cat recipe for P.F. Chang’s Lettuce Wraps is one of those recipes. We love lettuce wraps. They’re great any time of year, but they do feel summery to me.

Andrea from The Greenbacks Gal used ground chicken or turkey, hoisin sauce, sesame oil and a few other ingredients to cook these up. This is another great recipe for those nights when you need to eat in shifts. The meat filling will hold up fine or can even be reheated in the microwave.
