3 Things that work in the kitchen

This week has been full – I mean full! – of soccer.  Monday we went to Elizabethtown for a game.  That was a 6-7 hour event, for us including the drive.  Tuesday was senior night for my son.  Thursday brought practice.  And Saturday we had four games in Cincinnati.

So what worked in the kitchen this week? Mostly what worked was packing food to take with us.  And we also ate out a few times too.  By this point in the soccer season, I’m ready for it to be over.  It’s fun and I really like seeing the kids play, visiting with the other parents etc, but overall I don’t really make a great sports mom.

1.  Packed – Hummus, bell pepper strips, naan

In an effort to eat something other than lunch meat sandwiches, I packed up a simple dinner of hummus, bell pepper strips and naan.  It was a nice change of pace and easy to eat in the car.  We had leftover brownies from the night before, so those went along with us too.

Packing dinner easily saved us $20, along with the time saved by not needing to stop on the way home.

2.  Filling the crockpot


On Thursday morning I filled the crockpot with Chicken Fiesta.  We love this recipe!  It makes a lot, which is perfect for a crowd or for having leftovers.  As it turned out, I ended up feeding eight people that night.  I thought it might only be Jim and me at dinner time, but our oldest daughter and her husband stopped by to pick up some mail. Our son and his girlfriend were here too.  And the two soccer playing kids came in after their practices to eat.

Here’s a short cut tip for you – I don’t always stir all the ingredients together when I do recipes like this.  I just pile them all in there and let it cook.  This doesn’t work for every recipe, but for one like this it’s fine.
