This is our last Ingredient Spotlight for 2011.  I’m working on a new list for the first few months of 2012.  You are going to love the first ingredient on the schedule!

If you’ve got ideas for ingredients you’d like to have featured, leave a comment here and let me know.  I try to go for common ingredients that many of us have recipes for.  I love seeing what you link up each week!

Now for coconut!  Something about it reminds me of Christmas.  Here are a few of my recipes that use coconut:

  2. I love coconut so I’m sure I’ll be trying a few of these recipes! I uploaded an easy recipe for coconut butterscotch brownies that I often make when I’m looking to bake something in a hurry.

  8. One of my favorite coconut recipes is actually your coconut no-bake cookies. I’ve modified it because I have 2 kids with dairy allergies. I use coconut oil instead of butter, and for the milk, I reconstitute coconut cream concentrate from Tropical Traditions with water. I use extra coconut concentrate to make it more coconut-y than normal, and then I omit the coconut extract. I use a hair less oats than you call for and make up for the oats with about twice as much shredded coconut. They’re really yummy!
