Slow Cooked Apple Oatmeal

I was going to call this Apple Pie Oatmeal, because it really does taste as good as apple pie.  I’ve made it twice now.  Once I used regular oatmeal (not quick cooking).  The second time, I used steel cut oats.  They were more expensive, but I thought they held up better in the slow cooker.  Jim thought that the regular oats were just as good.  They were good, but they were a little mushier than I would like.

The taste of both versions was delish!  Apples, vanilla, cinnamon, nutmeg, brown sugar…all for breakfast!  And the leftovers heat up great the next day.  Just add extra milk and microwave. [Read more...]

Whole Wheat Apple Pancakes

I’m pretty sure my family eats more pancakes than the average household.  We rarely ever have them for breakfast.  My kids know if Jim is out of town, we’re probably having pancakes for dinner.  Or if I need a super-quick meal, pancakes it is.

I served this stack for lunch after church, with ham and a fruit salad.  I dressed up the whole wheat pancake recipe with apples, applesauce, cinnamon, nutmeg and brown sugar.  Delicious appley goodness on an October afternoon.

Homemade Apple Sauce in the Slow Cooker

This may be one of the best things I’ve ever made.  Warm, sweet and cinnamon-y.  It made the house smell wonderful while it was cooking.

I altered the recipe on A Year of Slow Cooking.  I used more apples, more brown sugar, more cinnamon.  I also used apple juice instead of water.  I will be making this again, it was so delicious.

Apple Brown Betty Muffins

Oatmeal Chocolate Chip Cookies

Unfortunately, you only get to see a photo of the ingredients this time.  I completely forgot to take pictures of the cookies!

Let me see if I can paint a word picture for you.  They were round, lightly browned, chock full of oats and studded with plenty of chocolate chips, not too flat or too fluffy, the perfect amount of sweet.

I adapted the recipe from the back of the Great Value quick oats box, swapping out shortening for butter and using more chocolate chips than the original called for.

Cranberry Oatmeal Cookies

Most of my desserts don’t rank high on nutrition.  I don’t expect that out of a dessert.  But this one is different.  Made with whole wheat flour, oatmeal and dried cranberries, these cookies offer more than just good taste.  The recipe is adapted from Whole Foods for the Whole Family.  The original called for wheat germ, but I didn’t have any so I altered the amount of flour.  I also added cranberries to give them more taste and interest.

Chocolate Chip Pecan Banana Bars

I ran across a recipe on Cookie Madness the other day that sounded to good to pass by.  As it happened, I had ripe bananas sitting on my counter just waiting for a great recipe to come along.  I admit to changing the recipe a bit and I changed the name too.  The original was called Banana Blondies, but I didn’t think these had the texture of blondies.  It could be because I substituted white flour for whole wheat.  I also doubled the recipe, used more chocolate chips and pecans instead of walnuts.

The result was a soft bar, kind of like banana bread chock full of chocolate and pecans.  A pretty great way to use ripe bananas, in my opinion.

Simple French Toast

There’s nothing fancy or particularly special about this French toast.  It’s one of those staple foods that nearly every household makes, but it’s also comfort food full of childhood memories.  Crisp edges, melting butter and plenty of maple syrup make it a favorite.  I add some vanilla and spices too.  Add a cup of coffee and I could be happy with this for breakfast, lunch or dinner.

Gingerbread Waffles with Vanilla Cream Sauce

Scrumptious!  Gingerbread Waffles are a spiced up version of classic waffles with a touch of molasses.  The vanilla cream sauce compliments the waffles perfectly, although they’re also good with maple syrup.  We drank apple cider with these and it made for a very Octoberish meal. [Read more...]
