Chocolate Drop Cookies

I’m going to guess that you have everything to make these cookies in your pantry right now.  Recipes that satisfy your chocolate cravings quickly and cheaply cannot be underrated.

This recipe was shared by Loy in the comment section of last week’s Ingredient Spotlight: Cocoa.   My kids were scavenging in the kitchen for a snack when I saw the recipe.  It didn’t take long until we were pulling warm, chocolatey cookies from the oven.  Loy’s recipe calls for nuts, but I tossed in some Heath chips instead.

Cornbread Muffins

Does anything round out a meal as well as cornbread?  Maybe it’s just my Kentucky roots.  (My mom’s family is from Kentucky, so I can claim that.)  Or the fact that we’ve lived here for 20 years.

Or maybe cornbread just really does round out a meal better than most anything else.

Usually, I make Southern Cornbread or Cheddar Muffins or sometimes, Hoe Cakes.  This time I wanted a muffin without the cheddar.  And I wanted a little sweetness. (I actually put a bit of sugar in the cornbread.  Like a Northerner!)

Raspberry Filled Brownies ala Mode

If you’re looking for a special dessert for Valentines Day, this is it.  Your sweetie will love you for making this!

The raspberry filling dresses up the brownies.  Chocolate and raspberry mingle so well together.   A scoop of vanilla ice cream with extra raspberry sauce adds decadence.

As a side note, I think I could use some food styling help.  I sprinkled cocoa powder on the white plate and set the brownie in the middle.  So far, so good.  A round scoop of vanilla bean ice cream on top of the brownie.  And then I warmed the raspberry sauce and spooned it over the top.  Instead of drizzling down the ice cream in rivulets, it melted the ice cream and slid off in an un-pretty way.

Oh well.  Once we dug our spoons in, it didn’t matter how pretty it looked.  It tasted divine!

Oatmeal White Chocolate Chip and Cranberry Cookies

Last year, I saw recipes for cookies like this floating around the internet.  A friend brought some to my house and they were so good.  How can you go wrong with white chocolate chips and cranberries?

I decided to make them yesterday, but didn’t want to look up the recipe.  Googling is so hard, you know?

So I tweaked the Oatmeal Chocolate Chip recipe from the back of the Walmart brand oat box.  As soon as I finished making them, I noticed the recipe on the back of the Craisin package.  Oh well.  My tweaked recipe tasted buttery, with the sweet-tart flavors of the white chips and cranberries.  And the recipe made a lot.  Enough to munch and freeze some for later.

Low Carb Cranberry Sauce

This is a guest post from Dawn Farias.  She is going to be sharing her favorite low carb dishes with us in a new monthly series.

Cranberry sauce is a staple around the holidays and is a snap to convert to a more low-carb version.  You simply find a recipe you like and substitute your artificial sweetener of choice.  The trick is not adding too much because doing so can make your final product fairly bitter.  But in the final analysis, I suppose it’s all a matter of ‘taste’.  (Yes, I went there!)

White Chocolate Brownies and Tate’s Bake Shop Giveaway

My name for these bars would be White Chocolate Cranberry Bars, but the Tate’s Bake Shop cookbook by Kathleen King calls them White Chocolate Brownies.

I used to think that homemade pasta sauce took a long time to make.  That’s the way my Grandma made it and hers was always so good.

But pasta sauce doesn’t have to be an all day deal.  This one only takes about 10 minutes if you already have the Italian sausage browned out.  Add an extra 10 minutes if you need to do that step too.

Peach and Blackberry Pie

Last week my neighbor gave me some fresh blackberries.  There weren’t quite enough for a cobbler or pie, but I had a few peaches too.  I was not sure if this combination would taste good, so I asked for opinions on the Eat at Home Facebook page.  A few thought it was worth trying and a few people voted no on the idea.

Curiosity got the best of me and I decided to try it.  The verdict?  Yum!  You can’t go wrong with fresh summer fruit sweetened and baked into a pie.
