This is the final recipe in our Slow Cooker Soup series.  I have loved this series!

My goal with each recipe I’ve shared has been to put the ingredients in the crockpot and let them cook.  I didn’t want to have to pre-cook any meats for this series.  That’s the one step that will stop me from making something if I’m in a big hurry.

I stumbled on a method of cooking meat with bones in it right in the soups.  This has worked for several ham based soups and also chicken soups.  And it’s the method I used for this soup too.

Cooking the chicken with bones right in the soup gives the broth a rich flavor.  It also simplifies the recipe too.

The original recipe for this soup comes from Modern Mrs. Darcy.  Anne is one of my favorite bloggers to read.  She blogs on all kinds of interesting topics and she’s a fellow Kentuckian too.

I changed up the soup recipe from the way Anne fixed it.  She made a homemade broth (great idea, but one I rarely take time for).  She also used chicken that had been pre-cooked and took time to sauté the vegetables.  All of those steps make wonderful soup, but I wanted a simpler version.

And I think I found success!  A simple Slow Cooker Thai Chicken Curry Soup with homemade taste that only takes 10 minutes to prep.

Slow Cooker Chicken Alfredo Soup

My sister-in-law gave me the idea for Chicken Alfredo Soup.  She said she’d eaten it before and it was good, but not as Alfredo-y as she wished.  The recipe she’d seen used a jar of Alfredo sauce.

Slow Cooker Chicken Alfredo SoupI decided to make a homemade version that didn’t use the jar of sauce.  This soup has chicken, penne pasta, and lots of Parmesan.  It’s a delicious take on classic chicken and noodle soup.

But it isn’t as Alfredo-y as you’d imagine the soup to be.  I think that may be an impossible thing to ask of a soup, because if you thicken it and make it just like the sauce, then you don’t have soup any more.  You’ve got sauce.

I almost named it something different, like Chicken Parmesan Soup, but that’s a different dish and I already have a Chicken Parmesan Soup.  So despite the fact that the name might be a little misleading, I’m keeping it.

And this soup is definitely worth making.  It’s warm, comforting and creamy.  And there’s no pre-cooking needed.  Everything goes into the slow cooker, although the milk and pasta get held out to near the end of the cooking time.

I love split pea soup, but it’s not one that I make often.  It’s best made when you’ve got a ham bone available.  But since I figured out a great work-around for that with my Ham and Bean Soup, I decided to use the same technique for this recipe.

This soup meets all the requirements for the Slow Cooker Soup Series.  It’s assembly only, taking only minutes to get everything started in the slow cooker.

I was afraid that my kids wouldn’t eat it.  The color is light green (even though the photo shows it to be more yellow).  Plus the name isn’t very kid-friendly.  However, they all really liked it and even went back for seconds.

I recently spied a recipe for Chicken Cock-a-Leekie Soup on Pinterest.  But when I followed the link, it didn’t take me to a recipe.  Don’t you hate that?

But, the name had me curious, so I started searching for more about the recipe.  I found out that Chicken Cock-a-Leekie Soup is a traditional Scottish recipe.  I’ve got a thing for Scotland recently.  It started with discovering the TV show Monarch of the Glen on Netflix, which takes place in Scotland.  The sense of place in that show is so prominent, it’s like one of the characters.  Every scene is beautiful.

Scotland seems to be popping up every where I look lately.  We’ve even got a Scottish singer coming to our church on Sunday.  I’m ridiculously excited about that.  I am fairly introverted, but I really want to talk to this man.  I’m afraid he might think I’m a bit crazy if I tell him I’m infatuated with his country.  That I’ve watched the TV show and made the soup.

Onto the soup…It seems there are a lot of ways to make this traditional dish.  Some recipes have rice, some have barley.  All of them have chicken, leeks and prunes.

Yes, prunes in soup.  I wasn’t too sure about that myself.  I found recipes that cooked the prunes in the soup and others that used prunes as a topping.   I decided to go the topping route.  That way, if someone didn’t like the thought of it, they could pass.

The soup itself is a basic chicken soup that is comforting and nourishing.  Surprisingly, the prunes paired beautifully with the flavors in the soup.  The rich, sweet taste of the prunes complimented the more savory flavors of chicken and leeks.  Even if you don’t think you’ll like the prunes, please give the topping a try. I think you’ll be pleasantly surprised.  Plus, you’ll feel authentically Scottish while eating it.

Don’t leave me yet!  Even if you’re not too sure about the sauerkraut, don’t pass judgment on this Smoked Sausage and Sauerkraut Soup yet.

I managed to feed this to my family and everyone ate it.  And they liked it.

I told them it was German soup.  I never mentioned the sauerkraut.  My pickiest eater asked what it was and I told him cabbage.  He thought there was a bit too much of it and picked around it, but he does that with a lot of things.  He liked the rest of the soup though.  It didn’t hurt that I served it with pretzel rolls.

This soup fits perfectly with our Slow Cooker Soup series.  All the ingredients go into the crockpot and that’s it.  Several hours later it’s ready to eat.  It’s hearty, filling and wonderful with pretzel rolls or hot cornbread.

This is another recipe I created in order to have something to eat during my Whole30 in January.  I’m pretty sure that all these ingredients are approved on that plan.  (I’ll be sharing more details and resources about the Whole30 next week.)

For this soup, I changed up the All Veggie Vegetable Soup recipe.  I wanted it to cook in the slow cooker.  I also wanted it to have some meat.  I used the same method for cooking the chicken in the soup that I used in White Chicken Chili.  It worked great.  I used 4 chicken thighs, but next time I’ll add more meat to eat.

You can use all kinds of different vegetables in this soup.  Normally, potatoes would be my main veggie, but on the Whole 30 they don’t recommend white potatoes.  So I used a lot of parsnips instead.  I thought it was great and so did Jim, but some of the kids didn’t like it.  They said the parsnips aren’t like potatoes at all.  To me, they’re close enough.  I like the taste of them though.

Slow Cooker Ham and Bean Soup aka Soup Beans

This was my very favorite meal when I was little.  Actually, it was a toss up between this and homemade spaghetti and meatballs, but this was high on my list.

We call it Soup Beans and it’s best when you’ve got a ham bone to use.  I rarely have a ham bone for making soup, but I came upon a good alternative.

For this, I used a bone-in ham steak.  It’s not quite as rich as if you use a whole bone, but it really enhances the taste to have some bone cooking in there.

There are a lot of ways to make this humble meal.  Some folks use pinto beans.  Some add carrots and celery.  I keep it simple with just the ham and beans.

Slow Cooker Pizza Soup

Every Friday, October through February, I’m sharing a new Slow Cooker Soup with you.  I’m loving this series!  You can catch all the other posts here.

I’ve got a new soup recipe simmering in my slow cooker right now, but it’s not ready to share yet.  So today, I’m sharing this Slow Cooker Pizza Soup from Mommy Hates Cooking.

One of the “rules” I set for myself in this series is that the entire soup needs to cook in the slow cooker.  No pre-cooking chicken or ground beef or browning things on the stove.  That really shortens the list of recipe possibilities!

This Pizza Soup does meat those requirements though.  It’s full of pizza flavor with pizza sauce, pepperoni and seasonings.  The best thing about it is that it’s assembly-only.  You can have this one cooking in a matter of minutes!
