I’ve started publishing the weekly menus on Sunday nights now instead of Monday morning. When I asked on Facebook, the consensus was Sunday is a better day for menu planning.

I really like the menu this week.  There are a couple of slow cooker meals and a variety of other dinners to keep things interesting, but still easy.  And the cake!  Oh my goodness!  There’s nothing better you can do with zucchini.  If a dessert involves cream cheese frosting, count me in.

Here’s what is on the menu this week:

Skillet Chicken, Peppers and Tomatoes, couscous cooked in chicken broth, salad

Smoky Chipotle Chicken Tacos in the Slow Cooker, chips & salsa, Guacamole

Hashbrown Casserole with Ham in the Slow Cooker, favorite green veggie

Asian Salmon on the Grill, Roasted Broccoli and Red Peppers, Microwave Corn on the Cob

Grilled Chicken with a Lazy Marinade, Winter Fruit Salad with Lemon Poppy Seed Dressing, Graham Muffins

Easy Meatball Subs, salad

Zucchini Carrot Cake with Cream Cheese Frosting

I think you’re going to like this menu.  It’s got some really good dishes and they are all fast too.  Some are super fast.  That’s the way I like my cooking to be.

Hope you had a great summer weekend!  I’ve got one kid off to Scout Camp this week and he is having a hard time with being homesick.  Anyone have a child deal with that before?  It’s hard to watch your kids struggle with something that only they can struggle with.  Parenting is a tough job!

As for the menu this week, there’s lots of variety.  You get 6 dinners and 1 dessert, along with serving suggestions.  Print, shop, cook!

This menu is full of favorites.  Don’t skip the chipotle peppers in the chicken tacos.  They add a wonderful flavor.  You won’t use the whole can, but pop the rest in the freezer for future recipes.

Italian Sausage and Spinach Stuffed Shells makes enough for 2 meals, assuming a family size of around 6 people.  If you have a smaller family, you’ll be able to get more meals out of it.  It’s perfect to share with a friend or stock your freezer.

Calico Bean Soup also freezes well, if you find yourself with leftovers.

January is nearly over.  I didn’t make any resolutions, but we did  change things up in our homeschooling for second semester.  We switched co-ops and changed some of the curriculum too.  So far, it’s all going much smoother for us.  A month into it and I can say the changes were for the better.

Yesterday, my oldest child turned 20.  How is that possible?  Wasn’t it just yesterday that she was toddling down the hall in a pair of high heels and a onesie?

Today marks the day that I married Jim.  And he married me.  24 years ago.

I married him when I was 12.

Just kidding.  Really I was 20.  The same age my daughter is now.  Oh my goodness.

I’ve been working on clearing out my freezer and pantry to make space for holiday foods.  That’s been one of the topics on my Facebook page lately.  Pop over and join us in the conversation.

There’s another reason to like the Eat at Home Facebook page – this coming Saturday we’re doing a Virtual Freezer Cooking Party for holiday prep.  In reality, you can work on any kind of cooking you like.  Or even put together some jarred gifts (I’ve got 2 more gift ideas for you coming on Friday).  I’ll have a few ideas of good things to work on in tomorrow’s post.

I’m really looking forward to cooking with you Saturday.  The Facebook event we did in February was so fun.  It’s the next best thing to getting together in real life and cooking together.
