Italian Herb Salted Pork Roast and Potatoes in the Slow Cooker

This is an amazing meal.  First, it only takes a few minutes to put it in the slow cooker.  And it tastes fantastic.  The pork roast is tender and full of flavor, thanks to Italian Herb Salt, garlic and white wine.

I’ll definitely be making this one again.  Next time, I will add more whole cloves of garlic.  Jim and I were searching in the potatoes to find the cooked garlic.  They were perfect with the potatoes.

I love a meal that tastes like you’ve slaved over the stove, when you really only spent five or ten minutes putting it in the crockpot.  That’s my kind of cooking.

African Pulled Beef Sandwiches in the Slow Cooker with Yogurt-Mint Sauce

Part of my family is heading to Disney World in a couple weeks.  Because I’m in the group going, I can’t seem to stay away from the Disney stuff.  That means I’ve been avidly reading the Disney Food Blog.  Disney and food are two of my favorite things.

The other day, I ran across this review of a new sandwich found in Animal Kingdom.  I knew I had to try to create this!  Of course, I have no idea what it tastes like, other than the way it is described in the post.  Maybe I’ll get to sample the real deal while I’m there, so I can compare my version and Disney’s.

However, I have to say that the review was a great inspiration.  My version turned out full of flavor and tender.  My family loved it too.  And the fact that it uses the slow cooker is a bonus.  There’s just enough spice to make it interesting and give the meat a lot of flavor, yet it’s not burn-your-tongue hot.

How to Use Your Oven as a Slow Cooker

Saturday was our first ever Virtual Freezer Cooking Day via Facebook.   I say first ever, because it was so much fun to cook with you all and it was so productive that I know I’ll want to do it again sometime.

I cooked 3 large pork roasts over night, plus an accidental ham.  (I thought it was something else, and by the time I figured out it was ham, it was too late.  It had to cook.)  There was no way all of that was going to fit in my slow cooker.

Harvest Apple Pot Roast – Beef. It’s What’s for Dinner.

The Beef. It’s What’s for Dinner recipe challenge this week was for Beef Pot Roast with Maple Sweet Potatoes.  I used the recipe as inspiration and then did my own thing.  The roast turned out delicious.  It smelled wonderful as it simmered in the slow cooker.  The ingredients are a bit strange, and to be honest I wasn’t sure it would turn out at all.  But I’m happy to say that we all loved it.
