Iced Coffee Dip

 

It’s no secret that I love International Delight Light Iced Coffee.  I’ve made it into Ice Cream Cappuccino, churned it into ice cream, and served it up with Cinnamon Chip Scones.

My afternoon snack often consists of Light Iced Coffee (I like the Vanilla flavor, but it also comes in Mocha and in June there will be a new Light Caramel Macchiato to try) with animal cookies.

This time, I decided those animal cookies could use a sweet dip.  And what better flavor for a dip than Vanilla Iced Coffee!  This is so easy to make.  It would also be good with chocolate graham crackers or shortbread cookies.

Banana Cake with Coffee (Mocha) Icing

One of my Grandma’s signature desserts was Banana Cake with Coffee Icing.  She made it from scratch as a layer cake.  I’ve made her recipe before and it uses every bowl in the house.  No kidding.  It requires whipping egg whites and stirring dry ingredients and mashing bananas and boiling water and beating egg yolks…  A delicious, time-consuming mess!

I’ve simplified things a lot with this recipe.  It’s still made from scratch.  I use a sheet cake pan instead of doing a layer cake.  But I kept the Coffee Icing recipe the same.  It’s really mocha, but we didn’t use the word “mocha” back then.  Mocha is a new-fangled word.

Chocolate Cake with Cappuccino Frosting

This cake is all about the frosting.  Oh my goodness!  I don’t know why I never thought to do this before.

The coffee flavored butter cream is delicious eaten from a spoon or licked from the bowl.  But save some for the cake, because it’s a perfect pairing with chocolate cake.

Ambrosia with a Twist of Lime – The Goodness of Sunkist Valencia Oranges in Summer

Citrus Chex Buddies or Citrus Puppy Chow – You Won’t Be Able to Stop Eating This

So, I was browsing around on Pinterest the other day and found this delicious twist on the original chocolate/peanut butter Chex snack.  The actual recipe on the Chex site is for Lemon Chex Buddies.

I decided to add some lime juice.  And because I’m much too lazy to zest an actual lemon, I needed to use dried zest and all I had was orange.  But the combo of orange, lemon and lime is fantastic.  Sweet, sunny and slightly addictive.

Lemon Pineapple Cake Mix Cookies with Pineapple Glaze

What to do with the lemon cake mix hanging out in my pantry?  Cookies, of course!

This was an experiment.  I wasn’t at all sure how the crushed pineapple would work in a cookie made from cake mix.  I was afraid it would be too much liquid.  But they turned out wonderfully.  Soft and lemony with a sunny flavor.

Strawberry Lemonade Cookies with Pink Lemonade Frosting

Craving a pink-pink, sweet, sunshine-y bite of Valentine’s?

Here you go!

I woke up one morning a few weeks ago and the idea for this recipe popped into my mind.  I’m not sure why that happens to me sometimes, but it’s a lovely way to wake up.  That’s how the idea for S’mores Pie came to me too.

Anyway…I’d seen this post for Strawberry Cake Mix Cookies.  It brought to mind the strawberry cake mix that I’d had in my pantry.  I decided to combine it with pink lemonade. Flavor blast!

At first bite, the cookies taste almost too sweet and lemonade-y.  But then you want another bite and another.  Then pass me another cookie please.  These are good!  Like dropping bites of sunshine right into the middle of winter.

Apple Cider Cake

We’ve already covered the beauty of a dressed up cake mix in last week’s Ingredient Spotlight. The recipe for this cake continues that theme.

German Chocolate Upside Down Cake

Jim loves German Chocolate cake.  I usually try to make him one for his birthday.  This year, my mom mentioned this recipe which she got from my aunt.

It’s not a beautiful cake, but it is delicious with gooey sweet filling studded with coconut and pecans.

Apparently, my oldest son likes German Chocolate cakes too.  I’m pretty sure he ate half the cake.  9×13 pan gone in 24 hours.  Come to think of it, I’ve been noticing our food disappearing very quickly.  Like the huge watermelon I cut late one evening.  It was gone by lunch the next day!  My son said he only had 1 bowl of it, but I think he refilled that bowl 10 times.
