Slow Cooker Pork Chops and Baked Beans

Slow Cooker Pork Chops and Baked Beans

Pork Chops and Baked Beans is an easy recipe for a weeknight dinner.  The baked beans have a taste of molasses and the pork chops come out tender and juicy.

This recipe can actually be made in the oven or the slow cooker, so you can match it to your day and schedule.

The ingredients are all common, pantry ingredients.  And it won’t take longer than a few minutes to get it all assembled and ready to bake (or slow cook).

Tangy Sweet Pork Chops in the Slow Cooker – 2 Ingredients Plus the Pork

I love assembly only recipes for the slow cooker, don’t you?  Less than 5 minutes of prep and dinner is well on it’s way to being ready.

You may recognize the two ingredients that are paired up in this recipe from the popular meatball appetizers that get served at parties.  I decided to try it over pork chops instead of meatballs.  Really, I think you could use any type of meat for this.  Use what you find in your freezer or what’s on sale.

I served this with Easy Smashed Sweet Potatoes and steamed broccoli.  It tasted like I’d spent a long time cooking, but in total it probably only added up to about 15 minutes of hands on work.  And that was spread out over the day.  Perfect for a busy family!

Apple BBQ Pork Chops

The inspiration for these came from a Dairy Queen run the other week.  We went for ice cream, but while we were there I noticed a sign advertising apple bbq hamburgers.  I’m not sure what those are like, but it started my mind thinking about the combination of apple and bbq.

I like to keep things simple, so this is what I came up with.  Three ingredients give a sweet, smokey flavor to the pork chops.  You could use the sauce on chicken or burgers too.

And you could choose to grill the meat, cook it in the oven or use the slow cooker.  I chose the oven, only because I ran out of time for the slow cooker and it was way too hot outside to grill (triple digits – whew!).

Honey Dijon Pork Chops and Apples in the Slow Cooker

I would very much like to shake the hand of the person who invented the slow cooker.  Said person should be lauded with chocolate and roses and decadent coffee concoctions.

I’m naturally suspicious of cooks who don’t make good use of the slow cooker.  Why avoid something that is such a time saver, such a miracle worker?

Take this dinner, for instance.  Into the crock go pork chops, apples, onions and a bit of honey and Dijon.  Several hours later, you only need to add a green veggie and bread or salad and dinner is ready.  It practically fixes itself, leaving me with time to get stuff done spend time on Pinterest.

Sweet and Sour Pork Chops in the Slow Cooker or How to Make Dinner from What’s in the Fridge

Good news!  Just by rummaging through your pantry, fridge and freezer and creatively combining a few ingredients, you can have dinner tonight.

Here’s how it works.  Choose a meat from the fridge or freezer.  I chose boneless pork chops, but you might pick chicken or beef instead.

Check the fridge for a likely looking veggie or two.  I found a green pepper and onion.  Other candidates include red pepper, green onions, sugar snap peas, green beans, carrots – you get the idea.  Anything that you’ve got that sounds good. [Read more…]

Honey Mustard Grilled Pork Chops

Please excuse the charred spots.  I’m not an expert griller.  These still tasted great though.

A few weeks ago, I shared on Facebook that I had totally ruined Jim’s birthday dinner of grilled pork chops.  That time I set the whole grill on fire.  Flames were shooting from the grill, black smoke billowed into the yard and children were screaming.  We ended up with pizza for dinner.

I did better this time though.  The honey mustard is easy to stir together and gave the meat a nice flavor.  You could do the same thing with chicken instead.

Pork Chops Topped with Pineapple, Green Pepper and Onion

I found this recipe on a homeschool forum.  Magistra said she put this in foil packets on the grill for about 20 minutes.  That was my intention too, but it was starting to rain the night I made them, so I popped them in the oven instead.  The meat was flavorful and very moist.  This is a great way to dress up pork chops. Honey Pork Chops

I don’t have a picture of the finished Honey Pork Chops, but they were a hit.  The recipe is a simple marinade that you freeze the chops in, then you can grill or bake or cook them in a slow cooker.  Easy and good. [Read more…]

Chicken-Fried Chops in the Slow Cooker

These pork chops are so flavorful and tender.  The gravy is great on mashed potatoes (I’ll share that recipe tomorrow).  This is a crockpot recipe, but there’s a bit more work involved in prepping the meat for slow cooking.  Normally, I don’t like recipes that call for browning the meat before cooking, but in this case the result is worth it.  You want to get that golden crispness on the chops.  The little bits of crispies that get left in the pan are cooked into the gravy, making it especially yummy.
