Crab Cakes with Creamy Sauce

This summer, we’re taking a road trip in our kitchens.  It’s kind of like a regular road trip, without the chants of “Are we there yet?” and no need to fill up the gas tank.

We’ll be traveling through the country together and sampling dishes as we go.  A couple of weeks ago we stopped in New England for New England Blueberry Coffee Cake.  Today, we’re in the Mid-Atlantic states of Delaware, New Jersey, New York, Pennsylvania and Maryland.

There are so many different foods that I could choose to make for each region we visit.  Readers gave me lots of ideas on Facebook of dishes to include.  I only wish I could make a decent at-home version of a Philly Cheese Steak.  I’ve tried, but fallen short.  There’s nothing like the real thing, cheez whiz and all.

One reader mentioned a dish called “Garbage Plate” that is served in the Rochester, NY area.  It’s a hot dog (or sometimes hamburger), fried potatoes, baked beans, onions, mustard all covered with chili-meat sauce.  Wow!  It remind me of the Sloppers that we had in Colorado Springs last summer.  A wonderful mess!

I chose to make Crab Cakes.  I’m not sure how authentic these are.  I’ve only had crab cakes a few times, but these tasted just as good as those I’ve eaten in restaurants.  They’re quick and easy to make, but I’m not going to lie – they are a little expensive.  Yummy though!  Here’s what you’ll need:  [Read more…]

Creamy Italian Herb Cucumbers & Tomatoes

Cucumbers and tomatoes is one of our favorite summer side dishes.  It’s going to be even better when we’ve got tomatoes from our garden and maybe some cucumbers too.

This time, I decided to try PHILADELPHIA Cooking Creme as a dressing for the veggies.  It couldn’t be easier.  Just scoop some Italian Herb and Cheese Cooking Creme into the tomatoes and cucumbers and give it a stir.  So simple!

You can find quite a few recipes for cold dishes on the PHILLY Cooking Creme site, including this month’s featured recipe Creamy Asian Slaw.

Creamy Chicken Florentine and a Grocery Gift Card Giveaway!

My family loved this!  We love all things pasta.  Our weekly menu always includes at least one pasta dish.

So when Philadelphia Cooking Creme asked me to swap out one of our regular dinners with one of their recipes, I jumped at the chance.    There are several recipes in their Fresh Family Favorite recipe collection.  I chose this Creamy Chicken Florentine. Creamy pasta meals make my family happy. And you know how I love easy recipes.  This one fits that category too.

I chose to use the Reduced Fat Savory Garlic flavor of Cooking Creme.  I was afraid it might be too garlicky tasting, but it was perfect.  The taste was subtle, with just the right amount of flavor.

I did make a few minor alterations to the recipe.  First, I doubled it.  The original recipe serves 4.  Not enough for my family of 6.  I also skipped the pine nuts.  You can substitute slivered almonds, if you don’t want to spring for pine nuts.  (I love pine nuts, but they are pricey.)
