Pesto and Crushed Tomato Shells – 3 Ingredients, 15 Minutes

So I just read the title and it is a bit misleading.  This recipe contains no shell of tomato, crushed or otherwise.

It does have pesto, crushed tomatoes and pasta shells.  And that’s it, except the mozzarella cheese sprinkled on top.  Because you know how I can’t resist cheese.

15 minutes, start to finish and that includes time to boil the water.  Throw a salad at it and call it dinner, and a good one too.

Pesto Tomato Pizza

There may not be anything original about this, but it’s one of my favorite summer suppers.  And it only takes minutes to put together.  My kids aren’t big fans of tomatoes, so for them I make a cheese pizza or use cooked sausage that I’ve frozen.  Either way, everybody is happy and dinner is fast.

Cheese Ravioli with Pesto

Oh, this was good.  The freshly made pesto, sweet sauteed red peppers and onions, creamy cheese ravioli and grilled chicken were divine together.  I wish you could smell it, because it was just heavenly.  It was also super easy and quick to make.  I don’t have an ingredient picture for you this time, though.  Even while the ravioli was cooking, I was still deciding what would go into the dish.
