Peanut Butter Cheater Smores and a Poll

No fire? No stick?  No problem.  This is #3 in the Peanut Butter Sandwich 365 challenge.  Cinnamon graham crackers, creamy peanut butter, Nutella and Marshmallow Cream.  It would probably be even better if you could start a fire, grab a stick and roast a real marshmallow, but this quick version was delish.

I also have a poll for you today.  I’m wondering if you are a “stick to the recipe” type of cook or if you see recipes more as guidelines for cooking.

Crunchy Monkey Peanut Butter Sandwich

This made for some good snacking.  This is #2 in my Peanut Butter Sandwich 365 project (of which I have no real ambitions for actually making it to 365 versions of PB sandwiches).

Vanilla wafers, crunchy peanut butter, Nutella and banana.  Oh yeah!

Homemade Doggie Treats

I have a young friend named Abby, who has started a business this summer making and selling homemade doggie treats.  I bought some from her and told her I would feature her recipe here on Eat at Home, but I don’t have a dog or any pets at all.  So, I let my daughter’s pet rock introduce the treats.  And I borrowed my neighbor’s cute little dogs to sample them.  Maybe you’ve got a dog you’d like to make treats for.  Or maybe you’ve got a child who would like to start a little business themselves.

Peanut Butter Chocolate Ice Cream Sandwiches

I had a wild hair a few months ago to start another blog called Peanut Butter Sandwich 365.  That idea was 15 kinds of crazy though, so you’ll have to put up with a few peanut butter sandwiches here on Eat at Home.  I don’t think there will ever be 365 of them either.  And I have a bit broader definition of “sandwich” than is normal.

Chocolate Chip Peanut Butter Cookies

Looking for a cookie recipe with no egg?  Do you like recipes that have only 5 ingredients?  Then this is the cookie for you.  I found these while searching for recipes using baking mix, which I had bought to bake Coconot Cookies a few weeks ago.  Despite having sweetened condensed milk as one of the ingredients, the cookies weren’t overly sweet, allowing the peanut butter taste to come through. Chocolate Cake with Peanut Butter Frosting

Have I mentioned how much I miss my good camera? I wish the photo of that piece of cake was more in focus. It makes me feel like I need to get a new pair of contacts. Oh well, it tasted yummy!

I adapted this from a recipe in the Cake Mix Doctor cookbook. I love this book. Mine is well used.

Gather your ingredients:

For the cake you’ll need:
Devil’s food cake mix
2 Tbs. cocoa powder
1 1/3 cups milk (hang with me a minute and I’ll explain the vinegar in the photo)
1/2 cup vegetable oil
3 eggs
1 tsp. vanilla

The recipe actually calls for buttermilk. I never buy buttermilk and instead just sour the milk with a Tbs. of vinegar for each cup of milk. However, I was in a huge hurry when I made this cake and just grabbed the milk and poured it in before I soured it. Plain milk worked fine.

Mix all the ingredients in an electric mixer until well blended. Pour into a 9×13 pan that has been greased. Bake for 40-45 minutes at 350 degrees.

For the Peanut Butter Frosting you’ll need:

1 cup creamy peanut butter
1 stick butter, at room temp.
2 cups powdered sugar
3-4 Tbs. milk
2 tsp. vanilla

In an electric mixer blend the butter and peanut butter. Add the other ingredients and mix until smooth and spreadable, mixing in the extra Tbs. of milk, if needed.

Peanut Butter Balls

If you’re from Ohio I know it’s bothering you that I fully dunked the peanut butter balls in chocolate instead of making them look like buckeyes. I have a problem with all you Ohio people leaving little naked places on your candy. That’s just not right.

These are my must-have Christmas treat. I remember playing Barbies with my sister and we would break to go get a snack of peanut butter balls. Yum!

Gather up your ingredients:

2 sticks butter, softened
2 1/2 cups graham crackers
1 cup peanut butter
1 lb. powdered sugar
2 tsp. vanilla

semi-sweet chocolate chips
1/3 bar parafin wax

Cream the butter and peanut butter together in a mixer bowl. Mix in the remaining ingredients until it’s all well blended. Roll into balls about the size of a walnut.

Melt a bag of semisweet chocolate chips with the 1/3 bar of wax in a double boiler. The wax thins the chocolate to help it coat better and also gives a glossy shine. Dip the balls into the melted chocolate and put on wax paper to set up. Store in the fridge.

If you have left over chocolate, throw in some pretzels.
