Chicken and Broccoli Stuffed Shells with Alfredo Sauce

Sometimes limitations bring forth the best creations.

Recently, on a message board someone wanted to make stuffed shells.  She wanted to use chicken, no red sauce, no spinach and no ricotta.  She did have a jar of alfredo sauce.  I don’t know what the woman ended up making, but this is what I suggested.  It sounded so good, I decided to try it myself.

Chicken, broccoli and mozzarella cheese fill the shells which are covered with alfredo sauce and baked.  Bonus -the recipe makes enough to put some in the freezer.

Garden Rotini with Grilled Zucchini and Chicken

garden rotini with grilled zucchini and chicken done

Oh, my merciful heavens!  This was so very delicious.

Inspired by the grilled zucchini and a container of gorgonzola cheese, I quickly pulled this together for dinner one night.  Five of us were home to eat and we all loved it.  My oldest daughter worked late and came in after we had gone to bed.  She scrounged in the fridge and found the leftovers.  She said she ate some cold before she realized it was meant to be served hot, but it tasted good both ways.

I also used homemade seasoned salt in this dish.  If you haven’t made any of it yet, please take a couple minutes to stir a batch together.  Your taste buds will thank you.

Pepper Patch Pasta with Grilled Chicken

I was zipping through the produce section the other day, tossing things in my basket when I saw a pack of peppers.  Red, yellow and orange.  Not cheap, but they looked so good I couldn’t resist.  They waited in the fridge for a day or two until inspiration hit.

I decided they would be good paired with pasta, tomatoes and a creamy sauce.  I was right.  This dish was a hit with all of us.  It also makes use of the homemade seasoned salt that I posted yesterday. [Read more...]

Fire Roasted Tomato Sauce with Two Cheeses

One of my favorite kind of recipes to create is pasta dishes.  Coincidentally, I also love to eat pasta.  This sauce has both Parmesan and Provolone cheeses along with fire roasted tomatoes.  Ever since I tried fire roasted tomatoes a few months ago, they’ve been a staple in my pantry.  They pack a bit more flavor than plain diced tomatoes.

The sauce may sound like it’s hard to make, but it comes together in about 15 minutes.  Here’s what you’ll need: [Read more...]

Pizza Bowties with Italian Sausage

All the flavors of a fully loaded pizza with the speed and ease of a pasta dish.  This is a kid-pleaser.  You can substitute ground beef or chopped pepperoni for the sausage.  Pair it with a green salad and you have a quick weeknight dinner. [Read more...]

Sweet Chili Linguine with Grilled Chicken

As you can tell from the picture, I didn’t use linguine for this recipe.  I didn’t have any so I used vermicelli instead.  I found the recipe on the Disboards Budget Board and altered it a little from the original.  We all really liked it.  It combines our favorites of chicken and pasta, but the flavors are a bit different, which was nice.  There is a bit of spice and heat, but it wasn’t too much for the kids.  The recipe makes a lot of pasta.  If you have a smaller family, you might want to cut it in half. Pasta Soup

I’m not really sure what to call this soup.  I made it up one night to go with sandwiches.  I was looking for a minestrone recipe and decided to make up my own.  True confession: I’ve never eaten minestrone and really didn’t know what was in it.  I’m pretty sure this isn’t quite like minestrone, but it is really good.

The ingredients are simple and adaptable to what you have hanging around in your kitchen.  The soup comes together quick too.  Here’s what you’ll need: [Read more...]

Angel Chicken

I’ve seen this recipe floating around the internet for a while now.  A friend even gave me a copy written in handwriting on a recipe card a few months ago.  I’d put off trying it though, because it calls for Cambell’s Golden Mushroom Soup, which I can’t seem to find.  Finally, I decided that I could substitute.  I’m glad I did.  This is yummy, creamy and satisfying.  And for a bonus, it’s a crockpot recipe. Bacon and Tomato Pasta

bacon and tomato pasta done

I cooked up a bunch of bacon the other night, intending to put it all back in the freezer for another time.  My youngest son was begging to eat it for dinner though.  Since I wasn’t in the mood for breakfast for dinner, I decided to add it to a pasta dish.  We ate every last bit of this.  There were no leftovers at all.  I guess they liked it :-) [Read more...]
