Pan Fried Steak and Steak Burgers with Red Wine Onions and Laura’s Lean Giveaway!

One of my daughter’s male friends told her that the way to catch a guy is to cook him a steak.  I asked her if she told him how to catch a girl.  She said, she didn’t know how, but it would be harder than just a cooking a steak.  (In a later conversation, we agreed that making Nutella Strudel for her, might work.)

I do know that it made my sons and husband very happy to sit down to a meal of steak and our poor man’s version, Steak Burgers.  The Red Wine Onions made them both even more delicious.

There’s a lot going on in this post – 3 recipes and a giveaway! – so keep reading… [Read more…]

Maple Apple Chicken in the Slow Cooker

Did you know you can convert all kinds of recipes to cook in the slow cooker?  This one started out as a skillet meal.  I didn’t have time to cook it right before dinner, but I did have a few minutes earlier in the day to put ingredients in the slow cooker.

The ingredients are a bit odd – Italian dressing and pancake syrup.  Not your usual combo, but it makes for a flavorful sauce with a hint of sweet.  Here’s what you’ll need to make it: [Read more…]

Creamy Potato Soup

Potato soup is one of my favorite meals.  I have 3 different versions already (Ham and Potato Chowder, Baked Potato Soup and my humble Potato Soup).

This Creamy Potato Soup is a souped up version of the humble potato soup.  (Yes, I just used the word soup 3 times in the same sentence.)

It’s creamy (hence, the name), comforting and warm.  And it uses common ingredients that you probably already have in your pantry.  Here’s what you’ll need: [Read more…]

Garlic Rosemary Chicken and Potatoes in the Slow Cooker

I’ve had a beautiful rosemary plant growing in my garden all summer.  It’s one of the few things that did well out there.  But I hadn’t used any of the rosemary.  That’s crazy, isn’t it?

So, I decided that using sprigs of rosemary along with chicken, potatoes, garlic and white wine could be delicious.  And to make it super easy, I cooked it in the slow cooker.  It turned out great, a tasty version of basic chicken and potatoes.  I used boneless chicken, but the dish would have even more flavor if you used chicken with bones.  What is it about bones that adds so much flavor?  [Read more…]

Scrambled Eggs and Peppers

scrambled eggs and peppers done

This is more of a method than a recipe.  We ate it for dinner, but if you like a big breakfast, this would be great in the morning.

I used red and yellow bell peppers, onions and Italian blend cheese.  It paired up perfectly with biscuits.

Chicken Smothered with Summer Vegetables on a Bed of Couscous

smothered chicken done

5:30pm and I still didn’t know what I was going to make for dinner.  I piled all the likely ingredients from my fridge on the counter – bell peppers, cherry tomatoes, onions, garlic and parsley.  My first thought was an omelet, but when I went rummaging for eggs I found only 5.  Not enough for my family.

Boneless chicken tenders and a box of couscous came to the rescue.  Everyone in the family loved this, even the kids who aren’t crazy about veggies.  In fact, my pickiest eater tried and liked the bell peppers.

Red Beans and Rice with Ham

red beans and rice with ham done

This recipe is a great way to use leftover ham.  You could also make it with smoked sausage if you like.  I had grilled ham slices the day before and needed to use up the extra.  The recipe makes enough to feed about 8 people, so if your family is smaller you may want to only make half.

Here’s what you’ll need:

Pepper Patch Pasta with Grilled Chicken

I was zipping through the produce section the other day, tossing things in my basket when I saw a pack of peppers.  Red, yellow and orange.  Not cheap, but they looked so good I couldn’t resist.  They waited in the fridge for a day or two until inspiration hit.

I decided they would be good paired with pasta, tomatoes and a creamy sauce.  I was right.  This dish was a hit with all of us.  It also makes use of the homemade seasoned salt that I posted yesterday. [Read more…]

Mediterranean Chicken in the Slow Cooker

I have not been good lately about planning my menus.  Yes, I plan menus and grocery lists to post here, but I haven’t been planning for myself.  Consequently, I wing it a lot.  The good thing about winging it is that sometimes I come up with a really good new recipe.  That turned out to be the case this time. Smothered Steak with Mushrooms and Onions

I really liked this Smothered Steak.  One of my foodie resolutions was to cook with fresh mushrooms.  They aren’t my favorite food, but I’ve been trying to learn to like them.  They were good in this dish and easy to cook with.

This recipe makes enough that, depending on your family size, you can probably eat dinner the night you make it and still put some in the freezer for later.  I froze the whole recipe.  The gravy was so smooth and nice when I first made it, but it separated a bit in the freezing/reheating process.  It still tasted great though.
