Nutella and Macadamia Nut Braided Strudel

3 ingredients.  (4 if you include the egg wash)

And one of the ingredients is Nutella.  You just can’t go wrong with that.

My oldest daughter and her friend were discussing on Facebook their desire to eat Nutella toaster pastry.  They thought someone should invent that.  Because I stalk my kids on Facebook (you stalk yours too, right?), I commented that I could make that happen.

It’s a cinch to make, looks impressive and tastes even better.  The hardest part is waiting for it to cool.  The flavors are more pronounced at room temp, rather than warm from the oven.

Chocolate Drop Cookies

I’m going to guess that you have everything to make these cookies in your pantry right now.  Recipes that satisfy your chocolate cravings quickly and cheaply cannot be underrated.

This recipe was shared by Loy in the comment section of last week’s Ingredient Spotlight: Cocoa.   My kids were scavenging in the kitchen for a snack when I saw the recipe.  It didn’t take long until we were pulling warm, chocolatey cookies from the oven.  Loy’s recipe calls for nuts, but I tossed in some Heath chips instead.

Ingredient Spotlight: Nuts

I bought a pound of mixed nuts in the shell so I could take a picture for this post.  My family ended up eating most of them before I had a chance to photograph.  That surprised me.  I didn’t know they were so nuts for nuts.

They left the Brazil nuts and a few walnuts.  We all agreed the hazel nuts were the best, with almonds coming in a close second.

Butterscotch Snack Mix

Need to satisfy an extra big snack craving?  This is your recipe.  It makes a bunch.  And I warn you – if you start munching it, you won’t be able to stop.  I adapted the recipe from an old Taste of Home magazine.  The original called for Crispix Cereal, which I couldn’t find.  Do they even make that anymore?  I also changed a few other things.

A snack mix like this doesn’t last long around here. This mix is a little tangier than other chex mixes. That pleased my crew.

Spinach Salad with Spiced Nuts

I swiped this recipe from Julie at The Sporadic Cook. I made it at Thanksgiving but we ate it up so fast I didn’t get any pictures then. The small Super Bowl gathering we had was a good excuse to make it again.

The nuts should be easy to make, but I have a confession – for some reason I can’t seem to carmelize nuts properly. Instead of the butter and sugar turning into a smooth, yummy coating for the nuts, it just clumps and then begins to separate. I don’t know why this is, and if anybody can help me out, please give me some hints! I’m sure this step will go well for you though, so don’t hesitate to try. It really is supposed to be easy!

For the nuts you’ll need:

2 cups pecans
2 Tbs. butter
2 Tbs. sugar
1 tsp. seasoned salt
1/2 tsp. garlic salt
1/8 tsp. cayenne pepper

Melt the butter in a skillet and add the sugar and spices. Stir over medium heat for about 2 minutes. Add the pecans and stir about 4 min. over medium heat. Pour them out onto a cutting board lined with wax paper and sprinkle them with sugar to make them sparkly.

To make the dressing you’ll need:

1/4 cup apple juice
2 Tbs. cider vinegar
2 Tbs. brown sugar
2 Tbs. dijon mustard
3/4 cup oil
2 Tbs. poppy seeds (I left these out)

Mix all the ingredients together and pour over the salad just before serving.

Now for the actual salad:

bag of baby spinach
2 apples, chopped and mixed with a bit of lemon juice to keep them from browning
1 cup chopped celery

Put it all together and turn yourself around – I mean toss the salad – and enjoy!
