Homemade Pumpkin Spice Ice Cream

 

Fall has always been my favorite season.  Probably because my birthday month is September.

But also because the weather gets so nice and there are so many fun things to do outside.  This year, I’m determined to finally go to a corn maze.  I’ve wanted to do that for years, but we’ve never followed through.

I found one nearby that has a more reasonable price than some of the others I’ve seen.  They even offer a “matinee” price for Saturday afternoon.  Going in the afternoon could be a little hot, but that’s okay.

I love all kinds of ice cream, especially if it’s homemade.  If you’ve never tried Pumpkin Ice Cream, make this your year to do it!  If you like pumpkin things, you’ll love this.

It’s perfect for early fall, when the weather’s still warm.

We had scoops of the ice cream with my birthday cake.  And I’ve eaten it in a bowl by itself.

I’ve also dolloped a small scoop into coffee to make a Pumpkin Spice Latte.

And it goes great with chocolate, so bake up a pan of brownies and top them with Pumpkin Spice Ice Cream.

Chipotle Chile Chicken Nachos with Chipotle Sour Cream – a 15 Minute Meal

These nachos!  They didn’t last long.

A giant platter of nachos full of chicken, bell pepper, tomatoes, black beans and seasoned with McCormick Chipotle Pepper Chile is an automatic hit in my house.  Bonus points for topping it with Chipotle Sour Cream.  Oh. My. Goodness!

This is comfort food at it’s finest.  At least, in the opinion of my family.  We polished off this huge tray of nachos in no time.

Did I mention that this meal takes about 15 minutes to get on the table?

The key to that is having the chicken already cooked.  I love keeping cooked chicken in the freezer for fast recipes.

McCormick Chipotle Chile Pepper brings a hint of smokiness to the dish.  I like substituting Chipotle Chile Pepper for regular in some dishes.  It has a bit more heat, but the smokey flavor is extra special.

Have you ever tried it on watermelon?  It’s fantastic!

My family loved this meal.  Give them pasta, chicken and lots of flavor and they are happy people!

This Cajun Chicken Skillet with Pasta is a take on the Basic Chicken Skillet I showed you a few weeks ago.

You start with the basics:

And then you accessorize to make it something special.

In this case, I added tomatoes, creamy half & half, linguine, a little Parmesan and plenty of Cajun Seasoning from McCormick.

These simple ingredients come together to create a meal that’s worth gathering around the table to eat together.  Not only that, but it’s easy to fix.  And any leftovers can be reheated for the stragglers.  In our house, we never know if we’ll have 7 or 8 people at dinner or just 3!

Tomato Basil Parmesan Tilapia 15 minute meal

 

A lot of people eat fish during Lent.  If that describes your family, you may be looking for some new recipes to try.  And even if you don’t eat fish on Fridays during Lent, you will want to make this quick meal.

For this recipe I used tilapia and a McCormick Tomato Basil Recipe and Seasoning Mix packet that was meant for salmon.  I know.  I’m a rebel swapping out the fish like that.

The Tomato Basil Recipe and Seasoning Mix is both full of flavor and full of crunch.  The kids love having a crunchy coating on their fish.  They really eat up the fish I make if it’s both crunchy and has good flavor.  If I leave it fairly plain, only using salt and pepper to season, they’re less likely to eat it.

Tomato Basil Recipe and Seasoning Mix was a hit with all of us.  And since I had some Parmesan in the fridge too, I added some of that to the top.

This meal is very easy to put together.  Once the fish is thawed, you can have dinner ready in about 15 minutes.
