Cherry Limeade Cake

 

This cake.  Oh my word!

This cake is beyond fantastic.  You are going to want to make this cake!

Not only is this possibly the prettiest cake I’ve ever made (I’m not known for making pretty food), but it’s also one of the best tasting.  Maybe the very best.

I was inspired to create the recipe because of one of the donuts we served at Meredith’s wedding.  The Cherry Limeade donuts were my favorite of all of them.  They were cherry cake donuts with a limeade frosting that had the perfect amount of tang and sweet.

I knew I would use the Maraschino Cherry Cake recipe I made a few years ago.  It’s got such a pretty color and definite cherry flavor that isn’t overwhelming.

But I was a little stumped as to the frosting.  My first thought was to buy limeade mix.  You know, like lemonade mix only limeade flavor.  I was thinking of doing something like I did with the Strawberry Lemonade Cookies.  The problem was, they don’t sell limeade dry mix.

Thankfully, I talked to my mom before I started the frosting and she reminded me that there’s a frozen limeade concentrate.  She suggested using that.  I probably could have used straight up lime juice instead, but I was stuck on the idea of limeade.  And the frozen concentrate gave me exactly what I wanted – a sweet, tart, definite lime flavor that complemented the cherry cake perfectly.

Maraschino Cherry Cake

Isn’t that the prettiest pink cake?

I’m not known for beautiful cakes.  They usually turn out lopsided with crumbs in the frosting.  So I’m really happy with how this turned out.

The idea is not my own.  I saw the Cherry Vanilla Cake on Jam Hands and couldn’t resist trying it.  I altered Ali’s recipe in several ways.  She used the seeds of a vanilla bean, which sounds scrumptious, but I didn’t have any.  I swapped water for milk and butter for oil.

And I decided to frost it with whipped topping.  My original plan was to use Cool Whip, but then I remembered a recipe shared a few weeks ago on Ingredient Spotlight for homemade whipped topping.  That’s what I decided to try and I’ll share the recipe on on Thursday. [Read more...]

Banana Split Dessert

Last weekend we celebrated my in-laws 50th wedding anniversary in Gatlinburg, TN.  All of their children and grandchildren came together in a cabin to play games, watch home movies, take photos and eat.  This is one of the desserts we had.

I had never noticed this recipe before, but found it in two of my cookbooks while searching dessert recipes.  Later that same day, I saw the recipe posted on a message board.  I altered all 3 of the recipes to come up with this version.

The whipped cream looks a little funny on top because I had another dessert stacked on the lid in the cooler and it smooshed a bit.  Also, I meant to add nuts to the top and forgot all about them.  I found them hiding in a corner while cleaning up.
