Ingredient Spotlight: Gelatin/Jello

Normally, I’d grab several boxes of Jello from my pantry to take a photo for Ingredient Spotlight, but wouldn’t you know I was all out?  I’m also short on daylight.  The sunshine we had for a few days is gone again, replaced by gray rain.  Again.

The good news is that all this rain has made our grass green.  And I got to munch the first ripe strawberry from our garden last night.  Yum!

Judy’s Strawberry Pie

My mother-in-law makes the best strawberry pie (and peach using the same recipe).  The crust reminds me of sugar cookies and the glaze enhances the flavor of the strawberries and makes the pie look as good as it tastes.

Jello Popsicles

These are a blast from the past.  What could say “childhood summer” better than Dixie cups, craft sticks and jello?  I suppose you could say that bikes with banana seats or running through the sprinkler might describe “childhood summer” better, but I think these popsicles have an advantage.  These are the taste of summer, with all its cool, sticky goodness.  And if you eat it just right you can have the sweet, syrup dripping down your arm and off your elbow making orange polka dots on the sidewalk.

Blueberry Cream Jello Salad

This could easily be called dessert, but if you call it salad you won’t feel so guilty about having seconds.  If you’re one of those people who is turned off by jello, please give this a try anyway.  Even my jello hating husband likes it.
