Hot Fudge and Caramel Chocolate Poke Cake

This is one of those recipes that you’ve probably seen before.  It goes by different names – Holy Cow Cake, Butterfinger Cake etc.  Most of the recipes I’ve seen use sweetened condensed milk.

I like to bump up the yum, by using a jar of hot fudge and a jar of caramel topping.

I made this for my 14 year old son’s birthday a few weeks ago.  He likes to ask for labor-intensive cakes, but had somehow weasled two birthday cakes out of me this year.  So, instead of making the Cannoli Cake he asked for, I made this.

He was happy, because how can you not be happy with chocolate cake infused with caramel and hot fudge?  And I was happy because it’s super simple to make.

Coffee Toffee Ice Cream Pie with a Ribbon of Fudge

As far as I’m concerned, coffee ice cream with hot fudge is the best dessert in the world.  It’s my favorite of favorites.

So when I was asked to try Häagen-Dazs® and I got to choose my own flavor, I jumped at the chance.  Have I ever mentioned how much I love ice cream?

Of course, I chose coffee ice cream.  I thought about posting a photo of a big bowl of Häagen-Dazs® with hot fudge, because that is how I like to eat it best.  But, then a friend told me about a pie she once had.  The pie had coffee ice cream, rich fudge, toffee pieces and a chocolate crust.  Holy ice cream scoops!

This pie is impressive, perfect for serving to company.  It’s no-bake, easy to assemble and you can make it ahead of time because it gets kept in the freezer until you’re ready to eat.

Make Your Own Buster Bars

When I was little, my Dad sometimes would drive down to the Dairy Queen on 9th street and come back with a bag of Buster Bars and Dilly Bars for us to eat on the front porch.  There still isn’t a better way to enjoy a summer evening.

I haven’t been to Dairy Queen in years (something that needs to change soon, I think).  The other day I was telling my kids about eating those Buster Bars on the front porch.  Mid-story, I gasped.  My eyes lit up as an idea popped into my mind.  My youngest son said, “I love it when she gets that look.  It means she’s about to make something really good!”  He knows me well.

Caramel Fudge S’more Nachos

It’s like a S’more.  Only built like a nacho.

Oh yeah, and it has caramel.  And fudge.

And you don’t hold it on a stick over a fire.

I’d love to say this idea was mine, but it wasn’t.  Original idea belongs to George Duran.  I saw the title on his website and decided to run with it.  Mine are constructed different than his.  I didn’t check out his recipe until after I made them.  He uses chocolate bars and constructs them in a skillet.
