Slow Cooker Pork and Gravy Sandwiches

This is another one of those super simple, easily adaptable recipes.  In fact, I can think of three different ways to serve it.  All of them would be delish.  We chose the simplest serving method – sandwiches.

But you could also make the pork and gravy and serve it as whole pork chops with your favorite sides.  Then repurpose the leftovers as sandwiches.

Or you could make open-faced sandwiches with mashed potatoes. Like a Manhattan.  I think there are other terms for this type of sandwich, but I can’t think of them right now.  Leave a comment if you know of some.

Slow Cooker Pork and Gravy Sandwiches

 

I used 2.5 lbs of boneless pork chops and 1 jar of gravy.  If you like it more gravy-ish, just add a second jar.  And if you’re serving them as open-faced sandwiches with mashed potatoes, you’ll want the second jar of gravy.

For a side dish, I cooked some farmer’s market veggies in a skillet.  It was a quick meal that we really liked.

Slow Cooker Pork and Gravy Sandwiches

Yield: 6-8 servings

Slow Cooker Pork and Gravy Sandwiches

Ingredients

  • 2.5 lbs. boneless pork chops
  • salt and pepper to taste
  • 1/2 tsp. thyme, optional
  • 12 oz jar pork gravy (use a second jar if you like more gravy)
  • buns

Instructions

  1. Place all ingredients except buns in the slow cooker.
  2. Cook on high 5-6 hours or low 7-8 hours.
  3. Shred meat and serve on buns.

Cube Steaks and Gravy in the Slow Cooker

Oh goodness!  This one is a winner.

The boy people (and man person, too) who live in this house really loved this meal.  It was a fight-over-the-leftovers kind of love.

I don’t blame them either. I loved it too.

Generally, I’m against taking time to brown meat before tossing it in the slow cooker.  But in a few cases, it’s a step not to be skipped.  This is one of those cases.  It only takes a few extra minutes and the results are so worth the effort.

Pierogies with Smoked Sausage and Gravy

Traditional way to eat pierogies? Not so much. And I wasn’t sure at all that this would be good, but I decided to try it anyway.

The pierogies were the inspiration. Since they have mashed potatoes in them, the gravy seemed like a natural pairing. I wasn’t sure how the smoked sausage would be but it added a little zip of flavor to the other ingredients. The kids loved it and it was quick to fix. You can’t ask for much more than that.

Smothered Steak with Mushrooms and Onions

I really liked this Smothered Steak.  One of my foodie resolutions was to cook with fresh mushrooms.  They aren’t my favorite food, but I’ve been trying to learn to like them.  They were good in this dish and easy to cook with.

This recipe makes enough that, depending on your family size, you can probably eat dinner the night you make it and still put some in the freezer for later.  I froze the whole recipe.  The gravy was so smooth and nice when I first made it, but it separated a bit in the freezing/reheating process.  It still tasted great though. Cottage Pie

While browsing through Disney recipes at allears.net a few weeks ago, I discovered this gem.  A lot of the Disney recipes are complicated and not something that you’d want to create in your kitchen on an ordinary week night.  But this recipe from the Rose and Crown restaurant in England in EPCOT stands out from the crowd.  It has week night supper written all over it, especially after a few adaptations.  Put on Illuminations music, pretend you’ve snagged a water front table at Rose and Crown for the excellent fireworks show and eat up.  Tuesday night doesn’t get any better ;-)
