Roasted Garlic, Brown Butter and Parmesan Pasta (in 15 Minutes)

You know how I love a 15 minute meal.  Sometimes that’s all I have to pull dinner together.  Such was the case the night I made this, but the inspiration for the dish had come a few months before.

When I went to Nashville for Blissdom, a group of us had dinner together the first night.  Tricia from Once a Month Mom was our ring leader and she took us downtown to Demo’s Restaurant.  I chose the spaghetti with brown butter garlic sauce.  It tasted really good, but I had an inkling that I could make it better at home.

Slow Cooker Spicy Chicken Soup – with variations to fit your pantry

This soup has a lot of things going for it.

It can be made entirely in the slow cooker.

The chicken cooks in the soup, so no need for an extra step.

Hamburger Pasta Soup

I created this soup the other day when I needed something fast for dinner.  If you’ve got cooked hamburger in the freezer, this meal really comes together quick.  It’s a combination of Hamburger Vegetable Soup and Pasta Soup.

Feel free to vary the recipe according to what you like and what you have available in your pantry.  It’s a good one for using up small amounts of pasta.  You could also use rice or barley instead of the pasta.  And you might want to add more veggies.

Smoked Sausage, Cabbage and Oat Soup

A while back I shared how excited I was to find Quaker Steel Cut Oats at the grocery store.  They are significantly less expensive than the other brand I’ve seen and I like to use them for oatmeal in the slow cooker.

I never imagined I would use them in soup.

But then The Sweets Life linked up a recipe for Scotch Oatmeal Soup for Ingredient Spotlight: Cabbage.  I knew I had to try it.  The oats are kind of like barley.  They add heartiness to the soup.

I modified The Sweets Life recipe a little bit.  Hers doesn’t have any meat in it and I knew I’d get much further serving a soup full of cabbage to my family if I included some meat.  I was right.  They all ate the soup and liked it.

Chicken Shwarma in the Slow Cooker

I ran across a recipe for Chicken Shwarma on the blog, Jersey Girl Cooks.  Lisa roasted her chicken in the oven and it looks fabulous.  But being the lazy cook that I am, I decided this would work in the slow cooker.

Hot dog!  I was right!  My family loved this meal and I know I’ll be making it again.

I only made minor alterations to Lisa’s recipe.  I changed the cooking method and more than doubled the recipe so it would feed my family.  I never could find tahini, so I served it with cucumber-yogurt sauce instead.  If I ever find tahini paste (Walmart, are you listening?) I’m going to try Lisa’s sauce.

Ravioli with Tomato and Onion Sauce – 5 Ingredients!

Dinner doesn’t get simpler than this.

If you’re blessed with tomatoes growing in your backyard, you could start the water, pick a couple tomatoes and have the sauce finished by the time the ravioli is done.

I didn’t have fresh tomatoes for this, so I used canned.  The sweetness of the onions goes well with tomatoes.  Cheese ravioli is a perfect base for the sauce.

Italian Seasoned Salt Chicken in the Slow Cooker

A few weeks ago I decided to make some flat bread with homemade Italian Seasoning.  That didn’t work out too well on my first try.  I’ll have to play around with it a bit.

Velma’s Chili from Mitford Cookbook and Kitchen Reader

Have you read the Mitford series books by Jan Karon?  Father Tim and Cynthia feel like old friends and so do all the other characters that populate the small town of Mitford.

On my last library trip, I spotted the Mitford Cookbook and Kitchen Reader.  It’s full of recipes mentioned in the books (Orange Marmalade Cake, anyone?) and also lots of excerpts.  Food and stories is a hard combination to beat.

Bowtie Pasta with Italian Sausage and Bell Peppers

There are nights when I stare into my pantry, wondering what I’m going to fix.  On this particular night, the contents of the pantry made me consider making Italian Sausage with Bowties but I didn’t have any stewed tomatoes.  I decided to change the recipe up a bit and came up with this.

Pan Fried Steak and Steak Burgers with Red Wine Onions and Laura’s Lean Giveaway!

One of my daughter’s male friends told her that the way to catch a guy is to cook him a steak.  I asked her if she told him how to catch a girl.  She said, she didn’t know how, but it would be harder than just a cooking a steak.  (In a later conversation, we agreed that making Nutella Strudel for her, might work.)

I do know that it made my sons and husband very happy to sit down to a meal of steak and our poor man’s version, Steak Burgers.  The Red Wine Onions made them both even more delicious.
