Slow Cooker Jerk Chicken Sandwiches with Cucumber Mango Salsa

There’s something about the warm weather that suddenly makes me feel like I’m living on some gorgeous, tropical island. As soon as summer hits, Caribbean-inspired meals end up making it into our dinner rotation a lot more often. Usually, this means lots of grilling – but some days the convenience of the slow cooker just wins out.

JerkChicken

This dish is inspired by a lunch we had on vacation in Honduras a few years ago. The combo of spicy jerk chicken paired with the cool cucumber mango salsa is perfect for summer. And, it couldn’t be easier. The chicken can be prepped in about five minutes before I walk out the door for work and the salsa only takes another ten minutes or so when I get home – which means more time to get outside and enjoy the summer sun!   [Read more...]

Gazpacho – Or what to do with zucchini from the neighbors

The fantastic thing about this soup is that it’s really just a bowl full of raw veggies.  But it tastes divine.  So good, you could just eat and eat it.  So good for you that you can do just that with no guilt.

It’s perfect for a hot, summer evening because it’s eaten cold.  I have to admit that freaked my kids out.  They did eat it, but they weren’t sure they liked cold soup.  Jim and I loved it though.

I adapted my recipe from Pioneer Woman, adding red bell pepper, jalepeno and parsley just because they were hanging out in my fridge.  I don’t own a food processor, so I used my pitiful blender that has been partially melted in the dishwasher.  It worked fine, so I guess I still don’t have an excuse to buy a food processor.

Chicken Gyros

chicken gyros done

There’s something about pita pockets that my kids love, so I had a feeling that this recipe would be a hit.  I was right.  A friend shared the recipe with me back in the winter when I was looking for meals to stock my freezer.  I decided this one would be great to take on vacation.  After marinating and cooking the chicken, it is frozen in Ziploc bags.  Reheating can be done in the microwave.  I served a quick cucumber and yogurt sauce with the sandwiches.

Update: This recipe comes from Cooking Among Friends, which is a freezer meal cooking club.  So cool!  They have a cookbook available and the Chicken Gyros is part of that.  I’m guessing this would be a great cookbook to own.  A friend had passed along the Chicken Gyros recipe and I just found out the original source.  Pop over and check out more from Cooking Among Friends!
