Loaded Cheesy Potato Casserole

The credit for this recipe goes entirely to my sister.  She knows how to kick things up a notch or three.

This variation on Hashbrown Casserole includes peppers, bacon, extra sour cream and french fried onions on top.  It may not win any nutrition awards, but I guarantee if you take it to a potluck your dish will come home empty.

Here’s what you’ll need (add a container of french fried onion topping that didn’t make it into the photo):   [Read more...]

Baked Sweet Potatoes Topped with Chicken Apple Sausage and Apples and Baked Potatoes Topped with Creamed Chicken

Would you believe that delicious stuffed potato is a 15 minute meal?  Now that’s fast food!

It’s super easy to fix, thanks to the sweet potato.  They are all scrubbed, wrapped and ready to microwave from Express Bake PotatOH!

As soon as I was contacted by the Express Bake PotatOH! people I knew what I wanted to do with the sweet potatoes.  And it didn’t disappoint.   Sweet potatoes have never been topped so well.  While the potatoes took a spin in the microwave, I fixed the sausage and apple topping.  The entire meal was ready in about 15 minutes.

I also had the opportunity to try baked potatoes and fingerlings.  Delicious and so easy!  I topped the baked potatoes with creamed chicken.  My kids loved it.  The potatoes bake perfectly in the microwave.  Express Bake PotatOHs are perfect for nights when you’re in a hurry.  They can be topped with all kinds of things or eaten as a side dish.  Either way, they are quick and healthy.

Chicken Enchilada Soup in the Slow Cooker

This is a recipe that will be made often in my house.  My kids have been asking for it again already.

I first saw the recipe when Mary from Giving Up on Perfect linked it for Ingredient Spotlight.  I’ve since spotted it on Pinterest several times.  This soup is fantastic!  And it’s easy too.

I made just a few minor changes to the way Mary fixed it.  I doubled the recipe, which made a lot.  It completely filled my 6 quart slow cooker.   Here’s what you’ll need:  [Read more...]

Slow Cooker Ham and Vegetable Soup

The wonders never cease.  My kids actually tried the pearl onions in this soup.  And they liked them!  Amazing.

This is one of those fantastic “assembly only” type recipes.  Basically, you dump everything in the slow cooker and let it do its thing.

You don’t have to use pearl onions, if your kids are averse (but you might give it a go, because you never know…).  The bag of frozen veggies I used included the onions.  There are only 5 ingredients in this soup and they can be changed up as you wish.

Here’s what you’ll need: [Read more...]

Creamy Potato Soup

Potato soup is one of my favorite meals.  I have 3 different versions already (Ham and Potato Chowder, Baked Potato Soup and my humble Potato Soup).

This Creamy Potato Soup is a souped up version of the humble potato soup.  (Yes, I just used the word soup 3 times in the same sentence.)

It’s creamy (hence, the name), comforting and warm.  And it uses common ingredients that you probably already have in your pantry.  Here’s what you’ll need: [Read more...]

Chicken Shepherd’s Pie

I’m always amazed at the infinite possibilities for chicken, potatoes and carrots to be combined in a recipe.  This variation is worthy of being repeated often.

If you have cooked chicken stashed away in your freezer, you’re only minutes away from having this dish oven-ready.  (See this post for tips on cooking and freezing chicken.)  Using left-over or instant mashed potatoes speeds things up even more.

My boys loved this recipe and feasted on several helpings each.  Here’s what you’ll need to make it for your family: [Read more...]

Slow Cooker Chicken and Gravy over Rice

Chicken and Rice slow cooker done

I’ve said it before and I’ll say it again.  Some foods just aren’t photogenic.  Please forgive me for this photo.

Thankfully, it tastes great.  Kid-pleasing comfort food.  And it’s a slow cooker meal, which is perfect for busy school days.  I adapted it from Mandarin Chicken and Rice Bake from the More with Less Cookbook.  I wanted something similar that could be fixed in the slow cooker.

Here’s what you’ll need to make it:

Italian Chicken and Rice Casserole

Italian Chicken and Rice Casserole

I wanted to make a chicken casserole the other day, but I wanted one that I’d never made before.  After pondering for a while, I decided to alter Chicken and Cheesy Rice Casserole and give it an Italian spin.  Everyone liked it.  We had leftovers for lunch the next day and I thought it was even better leftover. Golden Chicken Enchiladas

This is the second in the freezer meals series.  This recipe and several more were shared by Suzanne on a forum I frequent.  I’ve tried quite a few enchilada recipes.  These were cheesy and mild.  The kids really liked them.  They also froze and reheated really well. [Read more...]

Sunday Chicken Dinner in the Slow Cooker

sunday chicken dinner in slow cooker done

This is one of my go-to meals.  When all else fails, it’s easy to throw chicken, potatoes, carrots and onions in the crockpot and let it do its thing.  A quick pan of cornbread and maybe a steamed green veggie and you’ve got a comforting warm meal with little effort. [Read more...]
