Last weekend we celebrated my in-laws 50th wedding anniversary in Gatlinburg, TN.  All of their children and grandchildren came together in a cabin to play games, watch home movies, take photos and eat.  This is one of the desserts we had.

I had never noticed this recipe before, but found it in two of my cookbooks while searching dessert recipes.  Later that same day, I saw the recipe posted on a message board.  I altered all 3 of the recipes to come up with this version.

The whipped cream looks a little funny on top because I had another dessert stacked on the lid in the cooler and it smooshed a bit.  Also, I meant to add nuts to the top and forgot all about them.  I found them hiding in a corner while cleaning up.

Peaches and Cream Dessert

The first bite I took of this dessert tasted good. The next bite made me want to take another and another.  The more I ate, the more I enjoyed the combination of juicy peaches and sweet cream filling with the crunch of the crust.

This is adapted from Tina’s recipe for Strawberry Delight on her blog, Mommy’s Kitchen.  I used peaches instead of berries and frozen whipped topping instead of dream whip.

Frosted Banana Bars

These are so, very good.  Of course, anything topped with cream cheese frosting is delicious.  An online friend shared the recipe with me.  I’m not sure where she found it.  She says that it freezes well too, which is nice because it makes a big pan.  My family had no trouble eating them all though. Blue Velvet Cupcakes aka KY Wildcat Cupcakes

March Madness is in full frenzy here in the Bluegrass.  The Cats won the SEC title yesterday in an awesome game that went into over time, Coach Cal’s face has been put on bottles of Maker’s Mark bourbon and everybody’s doing the John Wall dance.  All is right with the world, at least as far as University of KY fans are concerned.

So you can understand why I just had to make these Blue Velvet cupcakes when I saw the recipe on Sprinkle Bakes.  The cake is a blue version of Red Velvet cake and it tastes wonderful topped with cream cheese frosting.  [Read more...]

Baked Potato Dip

Before I talk about this recipe, I must apologize for the poor photo.  These short winter days are taking a toll of my photos.  There’s just not enough light at dinner time to take a good picture.  Some of my favorite food bloggers, who have excellent photos on their sites, use special lights or cook so they can take photos during day light.

For better or worse, my process is more natural than that.  I take pics of food as I make and serve it.  If it’s dark outside when the food is done, it’s dark and I just have to deal with it.  The benefit is that the recipes I share are real recipes, coming out of a real kitchen.  The down side is that sometimes the photos aren’t very good.

Now that I’ve apologized for the embarrassingly bad photo, I’ll tell you about the dip, which is oh-so-yummy.  I found the recipe on Tasty Kitchen a few months ago and finally had the opportunity to try it out for a potluck meal.  It was a hit. [Read more...]

Gingersnap Sandwich Cookies with Orange Cream Cheese Filling

These cookies taste like old-fashioned Christmas.  The flavor combination of molasses, ginger and orange is wonderful.  I found the recipe on Recipe Girl.  She has an awesome list of Christmas cookies.

I did make a couple of adjustments to the recipe.  I doubled it, because I wanted to end up with more than 2 dozen cookies.  I didn’t count how many I had, but it was a lot and it took quite a while to bake them.  They’re so good though, I’m glad I doubled it.  I made a few other adjustments too. I think I make more candy at Christmas than cookies.  I like to dip things in chocolate.

I’ve seen this recipe floating around the internet for a while now.  A friend even gave me a copy written in handwriting on a recipe card a few months ago.  I’d put off trying it though, because it calls for Cambell’s Golden Mushroom Soup, which I can’t seem to find.  Finally, I decided that I could substitute.  I’m glad I did.  This is yummy, creamy and satisfying.  And for a bonus, it’s a crockpot recipe. Pumpkin Sheet Cake with Cream Cheese Frosting

I’ve heard that there’s a canned pumpkin shortage going on.  I hope not, because you are going to want to make this cake.  It’s perfectly pumpkin-y with a soft, cream cheese frosting that makes you want to lick your lips, your fork, your plate and the pan. 

The recipe makes a good-sized sheet cake so you can share it with a bunch of friends, or pop some in the freezer for another time.  You’ll still have plenty to eat for yourself.  I altered the recipe from the Amish Friends Cookbook.  My mother-in-law bought it for me for my birthday.  I love Amish cookbooks.  They’re 87.3% desserts with a few main dishes thrown in so as not to be too decadent.  They also have recipes for odd things like a drink called Hay-Time Switchel and Vinegar Punch.  [Read more...]

Cheese Stuffed Zucchini Boats

Are you being blessed with lots of zucchini in your garden now?  Try something different than zucchini bread.  My husband and I had these for dinner the other night.  They are cheesy and flavorful.  I do admit that my kids ate grilled chicken instead, but they missed out by not trying the zucchini boats.
