Cranberry sauce is a staple around the holidays and is a snap to convert to a more low-carb version. You simply find a recipe you like and substitute your artificial sweetener of choice. My name for these bars would be White Chocolate Cranberry Bars, but the Tate’s Bake Shop cookbook by Kathleen King calls them White Chocolate Brownies.
By either name, they are delicious. The bars are dense and sweet, but not too sweet. You can definitely taste the white chocolate in these and the cranberries are a perfect complement.

When I was contacted about the I Can’t Believe It’s Not Butter! Holiday Bake-Off trip, I quickly agreed to participate. Then I realized I would need to come prepared to bake something. (Pictures from the trip are at the end of this post.)
Cranberries are a natural holiday food, so I created two recipes featuring these beautiful gems. Cranberry Muffins with Orange Marmalade Glaze is the recipe I chose to enter, only because I was afraid the roll dough in this recipe would not have time to rise in the 2-hour time limit.

I’m in love with this pumpkin recipe. I dream about it. I’ve even eaten it for breakfast. Twice.
It tastes seriously wonderful. Sweet, spiced apples and cranberries add so much flavor to the baked pumpkin. On top of that, it looks impressive. I’m not known for making beautiful food, so this is something to be proud of.
I am known for creating simple recipes and this does fall into that category. It can be ready for the oven in less than 20 minutes and that includes about 13 minutes of trying to cut the top off the pumpkin. [Read more...]

Most of my desserts don’t rank high on nutrition. I don’t expect that out of a dessert. But this one is different. Made with whole wheat flour, oatmeal and dried cranberries, these cookies offer more than just good taste. The recipe is adapted from Whole Foods for the Whole Family. The original called for wheat germ, but I didn’t have any so I altered the amount of flour. I also added cranberries to give them more taste and interest.

Still looking for a Christmas breakfast idea? You might want to make this french toast. The prep is all done the day before, so that in the morning all you need to do is slice the bread and fry it.
It’s really a cranberry bread pudding that is then sliced and dipped in eggs and half&half and then fried. The recipe is adapted from the Country Living Country Morning cookbook. [Read more...]
