Coconut Pie with Rum Sauce – Weeknight Easy and Guest Worthy (and a Live Chat)

You are not going to believe how easy this dessert is.  To make the pie, you just mix all the ingredients together in a bowl, then pour into a pie pan and bake.

That’s it!  If you can mix, you can make.

The Rum Sauce only requires stirring and 1 minute of boiling.  I used rum extract, because I didn’t want to buy a whole bottle of real rum for one dessert.

I made this one night after dinner and invited our neighbors to come eat it with us.  We sat on the back porch and talked while the kids played.  Every time we do something spontaneous and neighborly like this, I wonder why we don’t do it more often.

Ingredient Spotlight: Vanilla and other extracts

Have you ever tried doubling the amount of vanilla in cookies or muffins?  It can make them super yummy!  Sometimes, I think we take vanilla for granted, treating it like a non-flavor.  Vanilla done right is fantastic though.

Coconut Chocolate Chip Muffins with Cocoa Coconut Streusel

The other day, I posted a list of 28 Muffins You’ll Want to Try and Terri left this comment:

Hi,
I was looking at your muffin recipes. They look yummy! I’m also looking for a coconut muffin maybe with mini choc chips added. Have you ever heard of something like that? I thought maybe replacing the liquid with coconut milk then add either maybe a streusel with toasted coconut and a drizzle of chocolate. What do you think? Do you have any suggestions? I have tried a couple of your recipes and passed on your site to some friends.

Oh, what a good idea!  I went into the kitchen and got creative right away.  These are the result.  The muffin is infused with coconut flavor and studded with mini chocolate chips.  The streusel topping has cocoa and coconut.  Oh yeah!

Double Chocolate Coconut Cake Mix Cookies

That’s a long title for a cookie that only has 6 ingredients.  These are chocolatey and moist.  The coconut makes them extra special.  I used mini chocolate chips and I think they work better in this cookie than regular chocolate chips, although you can substitute if you need.

Coconut No Bake Cookies

A minor tweak to the original No Bake Cookie, makes for a delicious change of pace.  The same chocolatey goodness with a twist of coconut.  I thought about adding shredded coconut to them, but decided that my kids might find that a bit to much.  If you’re a true coconut lover you could substitute the oats for coconut. Coconut Syrup with Chocolate Chip Pancakes and Chocolate Chip Waffles

I don’t usually share 3 recipes in one post, but today I just have to.  Sunday, I was browsing around Tina’s blog, Mommy’s Kitchen and stumbled on this recipe for Coconut Syrup.  I had to make it and knew it would be perfect with chocolate chip waffles.  It was.
