Unfortunately, you only get to see a photo of the ingredients this time.  I completely forgot to take pictures of the cookies!

Let me see if I can paint a word picture for you.  They were round, lightly browned, chock full of oats and studded with plenty of chocolate chips, not too flat or too fluffy, the perfect amount of sweet.

I adapted the recipe from the back of the Great Value quick oats box, swapping out shortening for butter and using more chocolate chips than the original called for.

Double Chocolate Coconut Cake Mix Cookies

That’s a long title for a cookie that only has 6 ingredients.  These are chocolatey and moist.  The coconut makes them extra special.  I used mini chocolate chips and I think they work better in this cookie than regular chocolate chips, although you can substitute if you need.

Chocolate Chip Pecan Banana Bars

I ran across a recipe on Cookie Madness the other day that sounded to good to pass by.  As it happened, I had ripe bananas sitting on my counter just waiting for a great recipe to come along.  I admit to changing the recipe a bit and I changed the name too.  The original was called Banana Blondies, but I didn’t think these had the texture of blondies.  It could be because I substituted white flour for whole wheat.  I also doubled the recipe, used more chocolate chips and pecans instead of walnuts.

The result was a soft bar, kind of like banana bread chock full of chocolate and pecans.  A pretty great way to use ripe bananas, in my opinion.

Coconut Syrup with Chocolate Chip Pancakes and Chocolate Chip Waffles

I don’t usually share 3 recipes in one post, but today I just have to.  Sunday, I was browsing around Tina’s blog, Mommy’s Kitchen and stumbled on this recipe for Coconut Syrup.  I had to make it and knew it would be perfect with chocolate chip waffles.  It was.

Nutritious Bars

What?  You don’t think they look nutritious?  Maybe not in a world of vitamin water, live-active culture yogurt and lycopene in the ketchup.  But in the 70s world of Wonder bread, Twinkies and bologna sandwiches these cookie bars were the picture of health food.  After all, they have oats and peanut butter in them.

In defense of the name, the original recipe only called for 1 cup of chocolate chips sprinkled on top.  I decided to dump the whole bag on top, melt them and smooth it out.  Chocolate is healthy, right? [Read more...]

Double Chocolate Bundt Cake

This cake always makes me remember bringing my now 11 year old son home from the hospital after he was born.  My mom baked this cake and she brought me a big slice of it, probably offering to hold the little dumpling while I ate the cake.

Please tell me I’m not the only one to associate food with life events.
