3 Things that work in the kitchen

You may have noticed some trouble trying to get pages to load on the site recently.  We’ve been working on some backend things on the site the last week or so.  We moved to a new server in an effort to fix a few things, but the site is still a bit slow and glitchy.  Hopefully, we’ll have it all smoothed out soon.

There’s so much to look forward to at this time of year, but I’ve been pretty focused on this Thursday.  That’s the day that our daughter and son-in-law get home from four months in Bolivia.  In just four days we can hug them and feed them and tell them we love them.  And call them George.  Here’s the explanation of the George thing, in case you’re like my kids and have no idea why I’d call them George.

This 15 Minute Popcorn Chicken Parmesan was part of our Weekly Meal Plan recently.  I love this one!  Popcorn chicken never tasted so good.  It’s quick, but it tastes like you’ve gone all out.  I served a Caesar salad with it.  Delish!

2.  Oatmeal Chocolate Chip Cookies

One of my sons loves chocolate chip cookies and he loves to bake.  At least once a week, he makes a batch of Chocolate Chip cookies for us.  Recently he changed it up by making Oatmeal Chocolate Chip Cookies.  Maybe one of these days we’ll get him to venture away from the chocolate chips, but I kind of doubt it.

3.  Candy Cane Desserts

The other day we talked about getting healthy in January, but today we’re going to serve up a little more elf food.  This is how my brain works.  I want to be healthy, but I want fudge more.  Oh the battle!

Anyway, this is the time of year for sweets, so we’re going with it.

It’s also the time of year for unexpected company and impromptu get togethers.  This dessert is perfect to keep on hand for that.  It can be made ahead of time.  You can bring out the whole cake or just serve up pieces of it, saving the rest for another time.  And there are several pretty ways that you can plate it to make it look even more special.

Candy Cane Chocolate Crinkle Cookies

Chocolate Crinkle Cookies are one of my favorite Christmas treats.  This year, I had the idea to roll them in finely crushed candy canes, along with the powdered sugar.

The result is a deeply chocolate cookie with just the perfect hint of peppermint.  Small flecks of red candy cane make them pretty on the cookie plate.

I baked these up using Pampered Chef products for their 2012 Cookie Swap.  I love Pampered Chef.  The products are affordable and made for real people cooking at home.

I have quite a few Pampered Chef products already, but I was happy to try some new ones out.  The adjustable measuring spoons are fantastic.  I didn’t know if I would like them or not, but they’ve already become a favorite.  The cookie scoops are fantastic too.

And one thing really surprised me – the cookie sheet.  I’ve always baked my cookies on a baking stone.  That works great, but this time I used the cookie sheet, lined with parchment paper.  The cookies turned out perfectly.  No sticking.  No burning.  Just sweet perfection.  I’ll definitely be doing that again.

Below, you can see the assembly process for these cookies.  I didn’t roll the dough into balls, but just scooped it into the candy cane powdered sugar and rolled it around.  It made the process much quicker and easier than rolling all those balls.

Homemade Peppermint Marshmallows

I found this recipe on Little Birdie Secrets and knew I had to make it.  They were fun and easy to make.  I gave my boys the job of crushing the candy canes with a hammer, which made them happy.  The recipe makes a huge pile of marshmallows – perfect for giving some away and still having enough for your own hot cocoa.
