Easiest Ever French Toast – Taking a Slice of Bread to New Heights

Last month when I went to the I Can’t Believe It’s Not Butter test kitchens they fed us some delicious foods.  Lots and lots of food.  All made with ICBINB, of course.

Leave it to me to pick out the simplest idea to share with you.  In a room full of cheesecake, stuffed mushrooms, truffles (I may still have to share those) and scones, I zeroed in on toast.   I love simple, easy, manageable, effortless recipes.

Grab that tub of ICBINB and get ready to transform your morning toast. [Read more…]

Cranberry Pecan Sticky Rolls and My Trip to the I Can’t Believe It’s Not Butter! Test Kitchen

When I was contacted about the I Can’t Believe It’s Not Butter! Holiday Bake-Off trip, I quickly agreed to participate.  Then I realized I would need to come prepared to bake something. (Pictures from the trip are at the end of this post.)

Cranberries are a natural holiday food, so I created two recipes featuring these beautiful gems.  Cranberry Muffins with Orange Marmalade Glaze is the recipe I chose to enter, only because I was afraid the roll dough in this recipe would not have time to rise in the 2-hour time limit.

But the rolls are a cinch to make and have all the sticky-sweet goodness you expect from a sticky roll.  As a bonus, they’re studded with tart, red cranberries making them perfect for the Holidays. [Read more…]

Cranberry Muffins with Orange Marmalade Glaze – I Can’t Believe It’s Not Butter Holiday Bake-Off and Giveaway!

I know it’s Monday and that usually means a new menu with grocery list.  But today I’ve got something different for you and it includes a really cool giveaway!

I will join 9 other bloggers to take part in a friendly competition at the Unilever Test Kitchens.  The fun starts today with a giveaway of baking equipment!  But first, my recipe for Cranberry Muffins with Orange Marmalade Glaze. [Read more…]

Scrambled Eggs, Ham and Muenster Cheese Skillet

We needed a quick dinner one night (I feel like I say that all the time!), so breakfast for dinner worked great.  I really wanted to make Scrambled Egg-wiches, but I didn’t have any English muffins.

Instead, I cooked the eggs and ham in the skillet and then placed Muenster cheese slices over the top.  The cheese melted into the eggs and ham perfectly.

Super fast and it tasted great too.

How often do you have breakfast for dinner?  How often do you cook this type of food for breakfast?

Scrambled Eggs and Peppers

This is more of a method than a recipe.  We ate it for dinner, but if you like a big breakfast, this would be great in the morning.

I used red and yellow bell peppers, onions and Italian blend cheese.  It paired up perfectly with biscuits.

Blueberry Muffins with Orange Glaze

Do you ever just get a hankering for something?  I did the other day.  I wanted blueberry muffins but I really felt the blueberries needed to be paired with a hint of orange.

Sounds sunny, doesn’t it?  The muffins are perfect for breakfast, but we ate them for a snack.  (Don’t tell anyone, but I prefer muffins to cupcakes.  This tidbit of info could destroy my serious sweet tooth reputation.)
