Sausage, Ham and Cheese Quiche

I have to admit, I used to think pie shells were only meant for dessert. I went for years refusing to eat Chicken Pot Pie, Quiche or any savory dish with a pie crust. Finally, when desperately trying to come up with something different for dinner one night (and use ingredients I had on hand) I made a quiche and realized what I had been missing! I also thought that quiche could only be a fluffy, non-filling dish and boy was I wrong. This recipe is loaded with meat, cheese, potatoes, and the best part, it’s so easy to make! Another huge bonus, my very picky 12 year old loved it.

Quiche w label EAHI have been all about “re-purposing” leftovers, and this dish is great for that. I used a leftover baked potato, and leftover chicken sausage. You could use whatever you have on hand as well. My children won’t eat peppers and onions, but they would be great additions too. Healthier Sausage “McMuffin” Casserole

I love casseroles. I also love breakfast food…anytime of the day. Therefore, breakfast casseroles that can be served for breakfast, brunch or dinner are just my thing. Last year, I made an ‘egg mcmuffin’ casserole and have been meaning to make a sausage version ever since – because if calories didn’t count, I’d order a Sausage McMuffin over a regular one any day. Unfortunately, calories do count so I avoid the golden arches as much as possible, but can still have this yummy and healthier casserole whenever I want!

Sausage McMuffin Casserole EAH

Healthier Sausage “McMuffin” Casserole
Ingredients
  • 4 English muffins, split *I used Nature's Own 100 calorie multi-grain
  • ½ to 1 lb. turkey sausage, cooked & crumbled
  • 1 cup reduced fat cheddar cheese
  • 4 eggs (or ½ cup Egg Beaters and 2 eggs)
  • 1¼ cup skim milk
  • salt & pepper (to taste)
Instructions
  1. Preheat over to 325 degrees F.
  2. Spray an 8-inch square baking dish with nonstick spray.
  3. Cube English muffins, and add half in a single layer in baking dish.
  4. Top with half of the cooked sausage and ½ cup of the cheese.
  5. Layer the remaining English muffins, sausage and remaining cheese.
  6. Whisk together the eggs, milk, salt, and pepper in a medium bowl.
  7. Pour the egg mixture evenly over the casserole.
  8. Cover the dish with plastic wrap and refrigerate for at least an hour, but can be left overnight.
  9. Bake 45 to 50 minutes or until eggs are set.

I added a little extra cheese to the top because my family loves cheese. You can also double the recipe and bake in a 9 x 13 casserole dish if serving a crowd.  The recipe is very versatile in that you can really tailor it to your family’s taste, which is why I put 1/2 to 1 pound of sausage.  You can also use American cheese for a more “mcmuffin” flavor if you like.

Slow Cooker Breakfast Casserole

I actually didn’t make this casserole for breakfast, but for brunch after church.  It’s a perfect after church meal, because it’s easy to throw together while you’re trying to rush everyone out of the house.  And the cook time is perfect to have it ready when you get back.

I used potatoes with onions and peppers in them to add plenty of flavor without adding a chopping step.  This one is really just “assembly only”.  Important when you’re trying not to be the last family to slip into the sanctuary.

New England Blueberry Coffee Cake

How many U.S. states have you been too?  I have not been to very many, but that doesn’t mean I don’t want to go.  You know those culprits – time and money – that keep us from getting to do what we’d like to do.

So I had an idea that this summer I would travel the country from my own kitchen and invite you to come along.

This week, we’re in the New England states of Maine, Connecticut, Rhode Island, New Hampshire, Vermont and Massachusetts.   I would love to visit this area of the world, because I hear it is beautiful!  If you’re from New England, please leave a comment and let me know.  And tell us what your favorite regional foods are – links welcome!

I chose to make this recipe for New England Blueberry Coffee Cake.  I found the recipe on AllRecipes.  The only change I made was the baking time.  The time the recipe states was no where near long enough.  I also forgot to add the flour to the butter and brown sugar in the topping.  It still turned out, but the flour would have made it more like a crumb topping.

We loved this cake.  It’s full of blueberries, topped with brown sugar and butter and studded with walnuts.  Oh my! [Read more…]

The outside looks like a plain vanilla muffin.  But inside there’s a creamy pocket of Nutella hiding.

Can it get any better?

I don’t think so.

Coconut Chocolate Chip Muffins with Cocoa Coconut Streusel

I was looking at your muffin recipes. They look yummy! I’m also looking for a coconut muffin maybe with mini choc chips added. Have you ever heard of something like that? I thought maybe replacing the liquid with coconut milk then add either maybe a streusel with toasted coconut and a drizzle of chocolate. What do you think? Do you have any suggestions? Oh, what a good idea!  I went into the kitchen and got creative right away.  These are the result.  The muffin is infused with coconut flavor and studded with mini chocolate chips.  The streusel topping has cocoa and coconut.  Oh yeah!

Chocolate Chip Muffins

I whipped these muffins up one night to snack on during family game night.  We were playing spoons, which usually leads to ice cream for some reason.  Then the next morning we have no spoons to stir coffee or eat cereal because they’re all dirty from the game playing, ice cream eating fun the night before.

But on this night, I decided chocolate chip muffins would make a fine snack.  I love baking muffins, because it’s so fast and there’s an infinite variety of flavors.  Needless to say, these were a hit.

I have some big plans for taking these muffins to a new level that involve cream cheese and chocolate ganache.  I’m waiting for a day when I can bake in the afternoon so the photos have some daylight.  We’ve had so much rain lately, I may have to settle for a dark day.

Goat Cheese Biscuits

I have been so excited to share this recipe with you.  In early March, I visited a friend in Chicago and she took me to Table Fifty Two.  The food in that restaurant has a decidedly Southern flair.   Chef Art Smith has been a personal chef to Oprah.  Now he creates dishes such as Fried Green Tomatoes with Feta, Pancetta, Red Onion Marmalade and Kalamata Olive – Amazing!

We sat in the main room of the restaurant where Goat Cheese Biscuit dough was being poured into hot iron skillets and baked in a brick oven.  Our server brought us a serving of the biscuits to share.  Oh my!  They are light, with herbs and goat cheese inside and buttery Parmesan topping.

As my friend and I savored these biscuits and I watched the process of making them, I was pretty sure I could recreate the recipe at home.  And I was right.

Western Omelette Casserole

For Christmas morning, I wanted to make a different type of breakfast casserole than the egg/sausage one I usually make.  We have to have some kind of protein to counteract the cinnamon rolls, frozen fruit cups, and hot cocoa.

I set out on a search to find a recipe that suited me, but since I’m picky, I couldn’t find the perfect casserole.  So, I created one based on several recipes.  I knew I wanted ham, peppers and onions.  And it needed to be something I could make the day before and pop in the oven on Christmas morning to bake.
