So, I made up a new soup recipe. I wanted a beef vegetable soup that I could just throw the ingredients in the crockpot and let it all cook together. Most of the beef vegetable soups I’ve seen involve cooking the beef first and then adding it to the soup. I was feeling too lazy for that. Here’s what I came up with. Substitute as needed. Smothered Steak with Mushrooms and Onions
I really liked this Smothered Steak. One of my foodie resolutions was to cook with fresh mushrooms. They aren’t my favorite food, but I’ve been trying to learn to like them. They were good in this dish and easy to cook with.
This recipe makes enough that, depending on your family size, you can probably eat dinner the night you make it and still put some in the freezer for later. I froze the whole recipe. The gravy was so smooth and nice when I first made it, but it separated a bit in the freezing/reheating process. It still tasted great though. [Read more...]
Salsa Verde Steak in the Slow Cooker

This is so good and easy. A delicious Mexican meal that cooks in a crockpot – 2 of my favorite things. I adapted the recipe from The Ungourmet.

Round Steak with Vegetable Gravy in the Slow Cooker

I found this recipe stuck in my tattered recipe binder, jotted on a calendar page from 1998. I used to make it quite a bit, but somehow forgot about it. I’m glad that I found it again, because it’s really easy and good. [Read more...]
Beef Bourguignonne

Is there a food blogger out there who has seen the movie Julie and Julia who has not felt a burning desire to whip up a pot of Beef Bourguignonne? And no wonder! This was amazing!
It made me very happy to see that this is the recipe for the last Beef. It’s What’s for Dinner challenge. The recipe the NCBA shared with us can be found here. I combined several recipes in cooking up my version. Ever since seeing the movie, Julie and Julia, I’d wanted to adapt this recipe for the crockpot. Stephanie O’dea beat me to it on her blog, A Year of Crockpotting. I thought about using the slow cooker anyway, but ran out of time today to do it.
Harvest Apple Pot Roast – Beef. It’s What’s for Dinner.

The Beef. It’s What’s for Dinner recipe challenge this week was for Beef Pot Roast with Maple Sweet Potatoes. I used the recipe as inspiration and then did my own thing. The roast turned out delicious. It smelled wonderful as it simmered in the slow cooker. The ingredients are a bit strange, and to be honest I wasn’t sure it would turn out at all. But I’m happy to say that we all loved it.
East Meets West Burgers

It’s What’s for Dinner Wednesdays. I was asked, along with a few other bloggers, to participate in a recipe challenge hosted by Beef. It’s What’s for Dinner. The recipe for this week is East Meets West Burgers. I altered the recipe just a bit, using tortillas instead of buns. I also took advantage of a jar of Hoisin Sauce to flavor the burgers, cutting down on the number of ingredients. [Read more...]
Cajun Beef Southwestern Salad – Beef. It’s What’s for Dinner

I was contacted recently by the National Cattlemen’s Beef Association. They have asked several bloggers to be part of “It’s What’s for Dinner Wednesday” challenge. Each week in September NCBA will share a recipe on their facebook page and the bloggers will create the recipe at home (or our version of it) and share it on our blogs. You can also participate and enter to win a cool prize pack from the NCBA by visiting the facebook page.
The recipe this week is Cajun Southwestern Salad. The original recipe can be found here. I will say that I altered the recipe quite a bit. I had a couple reasons for doing this. First, I have a bunch of grape tomatoes that my sister-in-law gave me and I needed to use them. Second, the original recipe called for figs and blood oranges. I wasn’t at all sure I would be able to find those ingredients. Besides, the closest I’ve ever gotten to a fig is in a Newton. So, I’ve altered the recipe for the average, non-adventurous family.
Italian Beef Sandwiches in the Crockpot
Full of flavor with a bit of a kick, these sandwiches are delish! I found the recipe on the blog of one of my readers, Sherri. She has a great recipe blog called Everything in Moderation. My husband, who likes spicy foods loved these, but so did my youngest son who likes things plain. We just didn’t add the peppers to his sandwich and he didn’t use the dipping sauce.
