Sweet n’ Smokey Salmon

I’m excited to introduce you to Rachael, one of the new contributing writers for EaH.  I love her recipe for Sweet n’ Smokey Salmon.  I know that crunchy coating would be a hit with my family.  Rachael blogs at Confessions of a Mom on a Tight Rope.

During the summer, we spend a lot of afternoons at the pool. This leaves little time to make a good, fresh dinner. So, I like to have a few meals that are easy and fast to make. I call them my “go-to meals.”

The meal has to be something I can make in 30 minutes or less. This one takes me about 20 minutes. And it is so delicious. The recipe is below and I also have some step by step photos for you. Enjoy!

  • 1 ½ lbs of salmon, skinned
  • ¼ cup of smoked almonds, whole
  • 2 teaspoons of chili powder
  • 1 ½ teaspoons of paprika
  • 1 teaspoon of garlic powder and onion powder
  • ¼ cup of maple syrup
  • 2 tbsp of light soy sauce
  • A dash of kosher salt & cracked pepper
  • Ziplock bag
  • Cooking oil

Yield: 4-6 servings

Sweet n’ Smokey Salmon

Ingredients

  • 1 ½ lbs of salmon, skinned
  • ¼ cup of smoked almonds, whole
  • 2 teaspoons of chili powder
  • 1 ½ teaspoons of paprika
  • 1 teaspoon of garlic powder and onion powder
  • ¼ cup of maple syrup
  • 2 tbsp of light soy sauce
  • A dash of kosher salt & cracked pepper
  • Ziplock bag
  • Cooking oil

Instructions

  1. Cruxh the almonds. I put them in the Ziploc and roll over them with a rolling pin until it’s the consistency of breadcrumbs.
  2. Add in the chili powder, paprika, garlic powder, and onion powder.
  3. Spray salmon with cooking spray and coat all over with the almond/spice mixture. I cut mine in pieces and drop in the Ziploc and shake til covered. Note – you don’t want the salmon to be too thick or it won’t cook as fast.
  4. Preheat a large frying pan on medium for a few minutes. Spray with cooking spray and drop in the salmon.
  5. Cook for around 4 minutes on each side. The goal is the salmon will separate easily with a fork.
  6. Once the salmon is done, remove it from the pan.
  7. Add the syrup and soy sauce just for 2 minutes until it thickens.
  8. Serve salmon with the sauce over it. I serve mine over simple coconut rice with asparagus on the side.

Asian Broccoli Salad

This amazing salad showed up at a church dinner.  Everyone at the table where I sat was talking about it and wondering who brought it.  Most guessed that our pastor’s wife was the cook behind this dish.  She’s a fabulous cook.  I haven’t known her for long, but I’ve heard quite a few people mention various recipes that she makes.  (I even hear she has a recipe for coffee punch. Yum!)

Sure enough, Audrey was the one who brought this salad.  I asked her for the recipe and she graciously shared it with me.  Now I’m sharing it with you.  It reminds me a lot of Hawaiian Cole Slaw, another favorite of ours.  The dressing is a little different and of course, this uses broccoli and red pepper instead of slaw mix.
