Loaded Cheesy Potato Casserole

The credit for this recipe goes entirely to my sister.  She knows how to kick things up a notch or three.

This variation on Hashbrown Casserole includes peppers, bacon, extra sour cream and french fried onions on top.  It may not win any nutrition awards, but I guarantee if you take it to a potluck your dish will come home empty.

Menu, Grocery List, Recipes Year 3 Week 24

Yesterday was Compassion Sunday – a chance to get involved in changing the story for a child living in poverty.  It was exciting to hear stories from people in my church of children that they sponsor now.  And it was awesome to see people step into a new story, by sponsoring a child.

Soon, a group of bloggers will be in Tanzania.  They’ll be sharing everything they see and learn with us – stories of children whose lives are being made better by the work of Compassion International.

I love reading the posts from bloggers who go on these trips.  They give such an intimate look at the lives of the kids and what it really means to them to have a sponsor who cares.  The Nester is one blogger I already follow and she is going to Tanzania.  I’m looking forward to virtually traveling along to see what God is doing there.

Roasted Red Pepper and Sun-Dried Tomato Pasta with Chicken

My family loves creamy pasta dishes.  They’re so quick and easy to make that we can have this favorite meal on a busy week night or cooked up after church on a Sunday.

This version has roasted red peppers, sun-dried tomatoes and chicken marinated in red wine vinegar and homemade Italian Herb Salt.  Serve it up with a salad and a loaf of crusty bread with seasoned olive oil for dipping.  Even better than going out to eat and much cheaper too!   [Read more...]

Coconut Cream and Chocolate Dessert

I have a new thing for black bottom desserts.  Chocolate layers are just so scrumptious.

First, there was Black Bottom Peanut Butter Pie.

And now there’s this dessert with a layer of coconut cream filling over over a chocolate cream cheese layer.

It’s a variation of a popular dessert that goes by many names.  That recipe is often made with chocolate pudding, but can also be made with lemon.  Both are wonderful.  I decided to change it up by putting the chocolate in the cream cheese layer and using coconut cream pudding.

I often do quite a bit of cooking on the weekends.  Not every recipe is a winner, but this weekend I tested 3 recipes and all 3 are a hit!

Chili Lime Panko Tilapia and a $50 VISA card Giveaway!

Would you believe that delicious fish took only 2 ingredients?  It’s true!

The secret is Kraft Fresh Take.  They are a cheese and crumb (some have panko crumbs, some bread crumbs) mix.  You can do all kinds of things with them.  I chose to do a simple coating on tilalpia and then bake.  It made a crispy crust on the fish and added lots of flavor too.  My family loved it!  [Read more...]

Eat more fruits and veggies challenge (and Ebates Savvy Living Live Chat)

I find it hard to eat the RDA of fruits and veggies.  It requires a real effort for me to even come close to the amounts recommended.  And once I stop thinking about it, I fall back into bad patterns.

Getting the kids to eat fresh fruits and veggies is even harder.
