Menu, Grocery List, Recipes – Week 47


I hope that you had a great 4th of July celebration over the weekend!

The menu this week has lots of fresh fruits and vegetables.  I hope you’re lucky enough to have a garden to harvest from.  Mine is doing okay, not great.  The cherry tomatoes are producing some.  The other tomatoes aren’t doing as well as I wish.

Oh well.  There’s always the farmer’s market.  Or the grocery store, but it’s hard to find a good tomato there.

Another note about the menu – the recipe for Baked Chicken with Summer Vegetables includes white wine.  If you like to cook with wine, but don’t drink it you can freeze the extra for use in other recipes.

The menu includes 6 dinners and 1 dessert.  Serving suggestions are included in bold on the recipes and in curly brackets {} on the grocery list.

  1. I really like the cucumbers and onion salad. My mom made that for me growing up and now it is one of my favorites. If I have fresh tomatoes, I’ll throw them in as well!

  2. The cucumber and onion salad looks delicious. I have huge cucumbers that I got at a produce stand. I may use them to make that salad. The rest of the menu looks delicious!

  3. That is so smart–I’ve never considered freezing extra wine before!

  4. There’s never, ever any extra wine around my house! I totally agree about not being able to find a good tomato in the supermarket. Sadly tomatoes don’t grow well in our hot, humid, rainy, icky South Florida summers. We have to wait until November.
