I had read in one of your recipes that you use a muffin pan to freeze meat for single servings later. I think I missed something on the post, but can not find it. Do you line the muffin pan with anything or just put the servings in? Do you cover the pan with something like press-n-seal?
You don’t need to line the pans. Once it’s frozen, you can pop it out and put them in a freezer bag. If they won’t pop out easily, dip the bottom of the pan in hot water to coax them out. You might want to cover the top with foil or press-n-seal, but if you aren’t going to leave it long in the muffin pan it will be fine uncovered.
