Chicken Florentine Pizza

Every once in a while, I like a good cheater meal.  One that relies on a prepared ingredient to speed dinner prep.  This one uses two such ingredients – a jar of alfredo sauce and prepared pizza crust.  You could probably also count the bag of pre-washed spinach and shredded cheese too.

In fact, the only thing I really cooked for this was the grilled chicken.  If you’re in a big hurry, you could buy those grilled chicken strips from the meat section of the grocery.  I used the George Foreman to grill mine since the grill was covered with snow.

What can I say?  I like to cheat at dinner prep sometimes.  Call me lazy.

BBQ Chicken Sandwiches in the Slow Cooker

I could have called this 3-point BBQ Chicken, because I was literally tossing things into the slow cooker from across the kitchen.  No stirring.  No mixing.  No thawing took place.

We were in a hurry to get out the door at 7:25am.  I grabbed a bag of frozen chicken breasts and dumped them in the slow cooker.  Then I tossed other ingredients in, based on the Pulled Pork recipe.  I didn’t stir or mix, just turned the pot on and let it cook.

We came in that evening to wonderful smells, so much better than if I’d just used bottled BBQ sauce.  I quickly shredded the meat and served it on buns.  This was the meal we tried out popcorn as a side dish.  It had been a crazy, busy day and popcorn was the fastest thing I could think of.  I’m pretty sure I threw some apples and/or carrots on the table too.  Some nights you’ve just got to get everyone fed.  Can I get an amen?

Chicken Shepherd’s Pie

I’m always amazed at the infinite possibilities for chicken, potatoes and carrots to be combined in a recipe.  This variation is worthy of being repeated often.

If you have cooked chicken stashed away in your freezer, you’re only minutes away from having this dish oven-ready.  (See this post for tips on cooking and freezing chicken.)  Using left-over or instant mashed potatoes speeds things up even more.

21 Ways to Use Leftover Turkey

Because Thanksgiving is later this week, I decided not to post a new Menu + Grocery List today.  Instead, we’re going to talk leftovers. I know the turkeys haven’t even been cooked yet, but it’s good to plan ahead.

All of the recipes listed here call for cooked chicken, but you can use cooked turkey instead.  If you have plenty of leftover turkey, portion it out in 2-3 cup quantities and freeze it for later.  Having a stock of pre-cooked poultry meat in the freezer is one of my favorite quick-dinner tricks.

Chicken and Drop Dumpling Stew (and Free Thanksgiving Menu eBook!)

Orange Chicken

I’ve made this twice now.  It is so easy and we all love it.  The taste is similar to sweet and sour chicken, but it has a little bit of kick from red pepper flakes in the sauce.

It’s a complete cheater meal, making use of several convenience items.  That means this meal can be fixed in just about 15 minutes.  Faster than grabbing food at a restaurant.

Garlic Rosemary Chicken and Potatoes in the Slow Cooker

I’ve had a beautiful rosemary plant growing in my garden all summer.  It’s one of the few things that did well out there.  But I hadn’t used any of the rosemary.  That’s crazy, isn’t it?

Peanut Chicken

A few months ago I reached out to my Facebook readers and asked for a yummy Peanut Chicken recipe. One of my readers, Andrea, quickly responded! She is a military wife who loves to cook and entertain. And boy did she deliver with this recipe that she and her hubby have been using for years!

I knew I had to share it at Eat At Home. Simple ingredient list, doubles very easily for large families or planning ahead for leftovers, and is great for any busy family!

Don’t let the use of sriracha sauce scare you. The flavors blend beautifully. All five of my children enjoy this meal- it’s not hot at all. Want to kick up the spice? Increase the sriracha sauce.

Peanut allergies? Not worries. My {baby} Matthew is allergic to peanuts, too. The beauty in
this recipe is the sauce is made separately- it is your choice to dip or not to dip. Diversity, baby!

Marinade:

  • ¼ c peanut oil
  • 1 T fish sauce
  • 2 t sriracha sauce
  • 1 t coriander
  • 1 tsp cumin
  • 16 thawed chicken tenders

Combine all ingredients above except the chicken tenders in a container or dish. Mix well. Toss the tenders in and coat well. Cover. Place in the fridge for at least one hour.

Meanwhile, soak your bamboo skewers in a dish filled with water.

When done marinating, thread your tenders onto the bamboo skewers. I like to fit two tenders per skewer.

Place the skewers on the grill for 10-15 minutes or until thoroughly cooked.

(I like to cover my grill in foil when I cook things on skewers to prevent sticking and tearing of the meat which can then cause it to some rip off the skewer.)

While your meat is cooking on the grill, prepare your sauce on the stove top.

Peanut Sauce:

  • ½ c smooth peanut butter
  • ½ cup cream of coconut or canned coconut milk
  • 2t lemon juice
  • 2t fish sauce

Combine all ingredients in a medium sauce pan. Whisk together. Cook on very low heat stirring regularly. If you cook it too high the peanut butter loses its smooth texture and starts to separate. Separation does not affect the taste, just the appearance. I cooked it on setting 3 and that was too high-simmer or setting 1 would be perfect.

Serve with steamed rice. (Tip: reserve the leftover coconut milk used to make the sauce and use it when preparing your side of rice. Gives it a yummy smooth flavor.)
