Butter Toffee Cookies

This is another recipe from Recipe Girl’s cookie list.  Hers are Sparkling Butter Toffee Cookies.  Mine didn’t come out sparkly, but they are good.  I thought these would be a soft cookie, which is what I prefer, but they are a bit crisp.  They would be a great choice if you need to mail them.

I did double the recipe and added the whole bag of toffee chips, rather than just 1 cup.

Gingersnap Sandwich Cookies with Orange Cream Cheese Filling

These cookies taste like old-fashioned Christmas.  The flavor combination of molasses, ginger and orange is wonderful.  I found the recipe on Recipe Girl.  She has an awesome list of Christmas cookies.

I did make a couple of adjustments to the recipe.  I doubled it, because I wanted to end up with more than 2 dozen cookies.  I didn’t count how many I had, but it was a lot and it took quite a while to bake them.  They’re so good though, I’m glad I doubled it.  I made a few other adjustments too. Banana Chocolate Chip Cookies

I have a confession.  I don’t always use the bananas that get too ripe on my counter.  I watch them spot and darken and shrivel.  Then, instead of baking them into banana bread, I throw them away.  There. Now you know the kind of person I am. 

But the other day, I did rescue some old bananas from certain garbage.  I wasn’t in the mood for Banana Bread or Cream Cheese Banana Bread with Orange Glaze, so I did a search on Tasty Kitchen and came up with this recipe.

Aunt Gerry’s Pineapple Cookies

My Dad is one of 10 children in his family.  As the story goes, he was purely spoiled by his older sister, Gerry.  She coddled him, carried him and catered to him.  And he was ornery.  He and his brothers once cut the middle out of a cake she made.  They spread icing back over the hole so that no one knew until the cake was cut into.

For some unknown reason, she let him live.  Not only that, but she occassionally baked up a batch of his favorite Pineapple Cookies.

Mocha Chocolate Chip Cookies

Inspired by a cookie on Kristal’s blog, Knit 1, Kids 4 I created this cookie.  I made one batch on Friday night, which my family polished off.  I made another batch on Sunday evening for our small group.  Judging from their rapid disappearance, I’d say the cookies were a hit.

Butterscotch Cookies

Have you joined the challenge to save money by eating from the freezer and pantry for a week?  I found that I saved $100 this week at the grocery store.  Jen L.  shared that she saved $70 this week. 

Saturday, this really lived up to the term “challenge” for me.  My son had a soccer tournament, which meant two games on Saturday.  It would have been so easy to pick up fast food for both lunch and dinner, but I resisted.  We pulled together a quick meal of soup for lunch and the crockpot came to the rescue for dinner.   Staying out of the fast food places probably saved us about $30 on Saturday.  I’m glad I have you all holding me accountable :-)

I need a treat to keep me going.  These cookies come together from ingredients I usually have on hand.  They taste a bit like butterscotch blondies, only in cookie form.

Chocolate Chip Peanut Butter Cookies

Looking for a cookie recipe with no egg?  Do you like recipes that have only 5 ingredients?  Then this is the cookie for you.  I found these while searching for recipes using baking mix, which I had bought to bake Coconot Cookies a few weeks ago.  Despite having sweetened condensed milk as one of the ingredients, the cookies weren’t overly sweet, allowing the peanut butter taste to come through. CocoNot Cookies

Unless someone told you (like I’m about to do) that these cookies don’t have any coconut in them, you’d never know it.  Why make coconut cookies without coconut?  I have no idea, except they are easy and good and the ingredients are kind of novel, in a 70s way.
