Blueberry Muffins with Orange Glaze

Do you ever just get a hankering for something?  I did the other day.  I wanted blueberry muffins but I really felt the blueberries needed to be paired with a hint of orange.

Sounds sunny, doesn’t it?  The muffins are perfect for breakfast, but we ate them for a snack.  (Don’t tell anyone, but I prefer muffins to cupcakes.  This tidbit of info could destroy my serious sweet tooth reputation.)

Crepes with Nutella and Strawberry Filling

When my sister and I were teens, we used to make these crepes together.  I’m not sure where we found the recipe.  It could be that we brought it home from French class.  If so, that’s about the only thing I brought home from French class.  The language lessons didn’t stick nearly as well as the memory of these crepes!

I hadn’t made them in years, partly due to the fact that I didn’t own a non-stick skillet.  I finally broke down and bought one last week.  It’s just a basic 10.5” WearEver brand.  The next day I picked up a copy of Kitchen Wisdom by Julia Child from the library.  The book is excellent and it really made me happy to see her recommend a basic non-stick skillet from WearEver, “available in any hardware store” as she put it.

Garden Frittata

Eggs, Monterey Jack cheese, bell peppers and a handful of fresh herbs from the garden.  Deliciousness in a skillet.

The red and yellow bell peppers were my inspiration for this.  I can’t seem to resist them when I’m in the produce department.  Hopefully, I’ll be gathering red peppers out of my garden this summer, but until then I’ll have to gather in the Walmart produce section.

Simple French Toast

There’s nothing fancy or particularly special about this French toast.  It’s one of those staple foods that nearly every household makes, but it’s also comfort food full of childhood memories.  Crisp edges, melting butter and plenty of maple syrup make it a favorite.  I add some vanilla and spices too.  Add a cup of coffee and I could be happy with this for breakfast, lunch or dinner.

Snickerdoodle Muffins

All the scrumptiousness of a snickerdoodle cookie baked into a muffin.  The idea for this muffin popped into my mind, so I went on a quick internet search for a recipe.  When the search yielded nothing, I decided to make up a recipe myself.  I wanted the tops to come out crinkled with cinnamon sugar like the namesake cookie.  I also wanted to use cream of tartar in the batter, since that is a key ingredient in the cookies.

Success!  We now have a new family favorite muffin.  The cinnamon sugar is a bit crisp on top and the muffin is slightly sweet and vanilla -y.  Here’s what you’ll need: [Read more...]

Cinnamon Sugar Toast and Other Matters

I’ve got a variety of thoughts on my mind today and since it’s Saturday, it seems the perfect day to share them with you.

1.  I’m looking for a few good guest posters.  If you think you’d like to write a post to share here on Eat at Home, send me an email (eatpoetry@gmail.com).  You can share a recipe or other food related topic.

2.  I have been doing some writing for the SC Johnson website in their Family Economics section.  You can read one of my posts here.  I’ll have others published over the next few months.  I have been compensated by SC Johnson for this.

3.  Completely unrelated to food – We’re planning a trip to Disney World in a couple months.  One of my favorite sites to haunt is Disboards.com.  I found this very cool interactive video linked over there.  It’s a virtual day in WDW.  Each park is included and you can “ride” many of the rides.  Very fun.

4.  I’m planning to do some cooking for our Disney trip this weekend.  I’ve got 3 freezer meals picked out to make.  We’ll pack those on dry ice.  My mom is doing the bulk of the cooking though.  She’s already got lots of food made and in the freezer.  One of the meals I’m cooking is Spicy Garlic Chicken Pizza.  I’m also trying 2 new dishes.

5.  I eat cinnamon sugar toast for breakfast nearly every day.  I admit to getting a little bored with it, but it’s so easy and it does taste good.  What do you eat for breakfast?

Breakfast Burritos

I completely forgot to take a picture of these before we ate them all.  They are slightly adapted from Pioneer Woman’s recipe.  She uses homemade potatoes, but I decided to take a short cut and use the O’brien potatoes from the store.  I also used Italian sausage, which I’d already cooked and frozen.  I couldn’t find any regular sausage in my freezer.

I made about half the amount that PW makes and still ended up with about 12 burritos, using the fajita-sized tortillas. [Read more...]

Easy King Cake for Mardi Gras or Super Bowl

I found this idea in the current issue of Taste of the South magazine.  King Cake is traditionally served on Mardi Gras, which is coming up.  But I did manage to pick up enough of the Super Bowl talk to know that the New Orleans Saints are playing.  I think this cake might be a fun addition to your Super Bowl food.  Unless, of course, you’re a fan of the Colts.  (For the record, I had to ask my husband and son who the other team is. I also had to verify the name of the New Orleans team.  Yeah, I’m not much of a football fan.)

Coconut Syrup with Chocolate Chip Pancakes and Chocolate Chip Waffles

I don’t usually share 3 recipes in one post, but today I just have to.  Sunday, I was browsing around Tina’s blog, Mommy’s Kitchen and stumbled on this recipe for Coconut Syrup.  I had to make it and knew it would be perfect with chocolate chip waffles.  It was.
