Cornbread Muffins

Does anything round out a meal as well as cornbread?  Maybe it’s just my Kentucky roots.  (My mom’s family is from Kentucky, so I can claim that.)  Or the fact that we’ve lived here for 20 years.

Or maybe cornbread just really does round out a meal better than most anything else.

Usually, I make Southern Cornbread or Cheddar Muffins or sometimes, Hoe Cakes.  This time I wanted a muffin without the cheddar.  And I wanted a little sweetness. (I actually put a bit of sugar in the cornbread.  Like a Northerner!)

Whole Wheat Biscuits

My mom calls these graham biscuits.  They are a bit heartier than the white flour version and taste wonderful with honey.  The ugly one in the picture is on purpose.  Jim really likes the “mutt” – pieces of dough left over that I press gently together.

Blueberry Muffins with Orange Glaze

Do you ever just get a hankering for something?  I did the other day.  I wanted blueberry muffins but I really felt the blueberries needed to be paired with a hint of orange.

Sounds sunny, doesn’t it?  The muffins are perfect for breakfast, but we ate them for a snack.  (Don’t tell anyone, but I prefer muffins to cupcakes.  This tidbit of info could destroy my serious sweet tooth reputation.)

Snickerdoodle Muffins

All the scrumptiousness of a snickerdoodle cookie baked into a muffin.  The idea for this muffin popped into my mind, so I went on a quick internet search for a recipe.  When the search yielded nothing, I decided to make up a recipe myself.  I wanted the tops to come out crinkled with cinnamon sugar like the namesake cookie.  I also wanted to use cream of tartar in the batter, since that is a key ingredient in the cookies.

Apple Brownies

Despite the name, this dessert has no chocolate in it.  It is the texture of brownies, with a dense center studded with apples and a crisp top.  The cinnamon apple flavor is so good, especially warm.  And the ingredients are items I almost always have on hand.

Easy King Cake for Mardi Gras or Super Bowl

I found this idea in the current issue of Taste of the South magazine.  King Cake is traditionally served on Mardi Gras, which is coming up.  But I did manage to pick up enough of the Super Bowl talk to know that the New Orleans Saints are playing.  I think this cake might be a fun addition to your Super Bowl food.  Unless, of course, you’re a fan of the Colts.  (For the record, I had to ask my husband and son who the other team is. I also had to verify the name of the New Orleans team.  Yeah, I’m not much of a football fan.)

Angel Biscuits

These soft biscuits are so good, with a bit of yeast flavor.  You can eat them for breakfast or serve them at dinner.  The recipe makes a bunch, but the dough stores in the fridge for a few days.  I think you could also roll and cut them, then freeze them for later.  [Read more...]
