Sundays are the gateway to the new week. Even though they are often filled with a lot of coming and going, it’s a good idea to take a little time to unwind, relax and let yourself take it easy for a little while before another week of busy, busy, busy starts. I think dessert is a great way to do that. Tapioca pudding is an ultimate comfort dessert in my mind. Creamy, chocolatey and with some whipped cream on top? Sounds perfect!

One of the best side-bonuses of using the slow cooker for a lot of your family dinner meals is waft of delicious food that fills the house in the hours before dinner time. It’s a great way to perk up the appetites of your family and remind them that dinner time will be here soon! Basque tuna with potatoes and peppers is one of those meals that is fragrant with garlic and herbs. It reminds me of a dish from the European country side and the author of the recipe said it reminded them of a warm summer afternoon in France!

As always, it’s easy to make so you save time and energy to put into other things that are important to you.

Local gardens are still producing a bounty of fresh veggies in our area. One of those veggies that is always prolific in just about every region is the humble Zucchini! I love summer squash because it’s such a versatile ingredient. You can make sweet food or savory with it. It’s affordable and easy to grow. And it really just tastes so good! This recipe is for zucchini italiano in the slow cooker. It is a great way to use up a surplus of summer squash and even if you are getting a little worn out on zucchini, your family will probably really enjoy this meal!

Are you a meatloaf fan? I am! That’s one of the reasons why I think this recipe for Mango Meatballs sounds so good-it’s really just another way to serve meatloaf! It’s great because it stays nice and moist and the mango will add just the right amount of sweet and tangy. I love this kind of meatball served with rice and a good green salad. But I’m sure you could find a lot of creative ways to serve them. Maybe even in a meatball sub?

Woah, there. Stop in and take a trip to Cowboy country with this slow cooker one pot meal!

Seriously, with ingredients like that, Cowboy Casserole is not the kind of recipe that leaves you any leftovers.  It’s is so easy to make, and so hearty that you can consider it a one pot meal if you like! I love that there’s a vegetarian version included for those who avoid meat. And that both of them take just a couple minutes to toss together. Definitely a great recipe to add to your menu this week.
